JALAPENO JELLY

This recipe came from the Black Lakes in Canada. It is the best that I have ever tasted, and very easy to make.

Jalapeno Jelly image

Steps:

  • Combine the green bell pepper and 12 jalapeno peppers in the container of a food processor or blender. Process until finely chopped. This can be done in batches, if the peppers do not fit.
  • Transfer the peppers to a large saucepan, and stir in the cider vinegar. Bring to a boil, and let simmer for 15 to 20 minutes. Strain the mixture through at least 2 layers of cheesecloth, and discard pulp. You should have about 1 cup of liquid.
  • Return the liquid to the saucepan, and stir in the salt and sugar until dissolved. Bring to a boil over medium-high heat. When the mixture comes to a rolling boil (one that cannot be stirred down), boil for one minute, then stir in the liquid pectin.
  • Stir in the remaining jalapeno peppers, and ladle into sterile jars leaving 1/4 inch headspace. Seal jars in a hot water bath. Refrigerate jelly after seal is broken.

CALICO JALAPENO JAM

This recipe is a chunky type jam. I will enhance a variety of dishes, and makes a wonderful snack on top of cream cheese, served with crackers. From my Texas Home Cooking cookbook, by the Jamisons'. Prep time is an estimate.

Calico Jalapeno Jam image

Steps:

  • Combine all the ingredients, except the pectin in a large saucepan or stockpot.
  • Bring to a boil over high heat, and boil vigorously for 1 minute.
  • Immediately stir in the the pectin.
  • Bring mixture back to a rolling boil, and boil for 1 minute.
  • Spoon jam into prepared jars, leaving 1/4 inch headspace.
  • Process in a water bath according to directions, usually 10 minutes.
  • The jam may take several hours to set.

2 cups red bell peppers or 2 cups yellow bell peppers (about 3 small to medium peppers, or a combination of colors)
1/3 cup chopped fresh jalapeno (about 4-6 green or red)
5 1/2 cups sugar
1 1/2 cups cider vinegar, preferably unrefined
1 cup light brown sugar
2 tablespoons fresh lime juice
2 (3 ounce) packages liquid pectin, such as certo

QUICK PICKLED JALAPENO RINGS

While these are a no-brainer topping for your nachos, the fun doesn't stop there. These make any sandwich more special, and any salad less snoozy.

Quick Pickled Jalapeno Rings image

Steps:

  • Combine water, vinegar, sugar, kosher salt, garlic, and oregano in a saucepan over high heat. Bring mixture to a boil, stir in jalapeno peppers and remove from heat. Let mixture cool for 10 minutes.
  • Pack peppers into jars using tongs, cover with vinegar mixture, cover, and refrigerate until needed.

Texas Jalapeno Jelly image

Steps:

  • In a blender or food processor, place the jalapenos, half of the green peppers and 1/2 cup vinegar; cover and process until pureed. Transfer to a large Dutch oven. , Repeat with remaining green peppers and another 1/2 cup vinegar. Add the sugar, cayenne and remaining vinegar to pan. Bring to a rolling boil over high heat, stirring constantly. Quickly stir in pectin. Return to a rolling boil; boil for 1 minute, stirring constantly. , Remove from the heat; skim off foam. Add food coloring if desired. Carefully ladle hot mixture into hot half-pint jars, leaving 1/4-in. headspace. Remove air bubbles; wipe rims and adjust lids. , Process for 10 minutes in a boiling-water canner. Serve over cream cheese with crackers if desired.

  • Use a knife or a food processor to very finely chop the bell pepper. Scoop the diced peppers into paper towels and squeeze out excess liquid (this will help ensure the jelly sets up properly). Measure out 1 ½ cups of diced bell pepper (loose, not packed in the measuring cup).
  • Dice the jalapeños and squeeze the liquid out, in the same manner (I highly suggest wearing gloves when handling this many).
  • Add all of the diced peppers to a large, deep pot. Add sugar, vinegar, lime juice, and salt. Bring to a boil, stirring often. Reduce heat, but maintain a boil and boil for 10 minutes.
  • Stir in the liquid pectin and boil for another minute. Remove from heat and allow to cool for 5 minutes, then give a good stir (to evenly distribute the pepper pieces) and pour jelly into containers. Apply lids securely.
