AMAZING PORK TENDERLOIN IN THE SLOW COOKER

- Place pork tenderloin in a slow cooker with the contents of the soup packet. Pour water, wine, and soy sauce over the top, turning the pork to coat. Carefully spread garlic over the pork, leaving as much on top of the roast during cooking as possible. Sprinkle with pepper, cover, and cook on low setting for 4 hours. Serve with cooking liquid on the side as au jus.

Steps:
- Beat the pork slices with a meat mallet and dredge them in flour.
- Melt the butter in a frying pan and saute the onion for a few minutes.
- Add the pork and fry quickly on each side, then add the mushrooms, pepper and salt and cook a further minute or two.
- Pour in the cider and cook for about 30 minutes or until the pork has cooked and the sauce has reduced to a creamy consistency.
- Place the pork and its sauce on a heat-proof serving dish and lay the apple slices on top. Put the dish under a preheated hot grill for 1 minute to heat and slightly brown the apples.
- Sprinkle the dish with chopped parsley and serve.

- Preheat oven: Preheat oven to 200°C / 390°F (180°C fan). Place a rack over a tray (for resting the cooked meat).
- Sear pork: Heat oil in a large oven-proof skillet over medium-high heat. Sear pork all over until golden. This takes around 5 minutes (I sear 4 sides).
- Bake (Note 5): Transfer the skillet with the pork in it to the oven. Bake for 12 - 15 minutes or until an instant read thermometer reads 65°C / 149°F. This will have a blush of pink, a perfect medium for optimum juiciness. (For no pink at all, add 3 minutes cooking and target an internal temperature of 68°C / 155°F.)
