SEA SCALLOPS WITH NUTS

If you can find the rare (and shockingly expensive) true bay scallops from Nantucket or Long Island, by all means use them in this dish, but reduce the cooking time. Do not, however, try this dish with the tiny calico scallops (sometimes mislabeled as bays), which, despite your best efforts, will overcook before they brown.

Sea Scallops with Nuts image

Steps:

  • Put the oil and half the butter in a large skillet, preferably nonstick, over medium-high heat. Sprinkle the scallops with salt and a bit of cayenne. When the butter foam subsides, add the scallops to the skillet, one at a time (or all at once if you're using bay scallops), and turn the heat to high. Cook for about 2 minutes or until brown on one side, then turn and brown the other side for another minute or two. (Scallops are best when rare in the center; if you like them more well done, cook for another couple of minutes.)
  • Transfer the scallops to a plate and keep warm. Add the nuts to the skillet and, still over high heat, cook, stirring, until dark brown, just a minute or two. Add the wine and cook, stirring occasionally, until reduced to a syrup, about 5 minutes. Add the remaining butter; when it has thickened the sauce, pour over the scallops, garnish if you like, and serve.
  • A word about buying scallops: Many are dipped in a chemical solution to prolong their shelf life. Not coincidentally, this soaking causes them to absorb water, which increases their weight and-water being cheaper than scallops-decreases their value. Furthermore, the added water makes browning more difficult. You can recognize processed scallops by their stark white color; in addition, they are usually sitting in liquid at the store. Buy dry, beige (or slightly pink or orange) scallops from a reliable fishmonger and you won't have a problem.
  • Many cooks remove the tough little hinge present on one side of most scallops before cooking. But when you're stuffing scallops, leave it on and cut from the side directly opposite. The hinge will then serve the purpose of holding the scallop together and can be removed at the table or eaten; it's slightly tough, but not unpleasant.

Sauteed Sea Scallops With Caramelized Peaches image

Steps:

  • place oil in sautee pan and heat until light smoke.
  • lightly season scallops w/salt and pepper.
  • carefully add scallops to pan (do not crowd).
  • lightly brown and turn scallops.
  • add shallots garlic and peaches.
  • shake and flip in pan to mix.
  • add sugar and keep moving for 2 (two) minutes.
  • place on plate.
  • put peaches on top.
  • squeeze fresh lemon just before serving.
  • goes great with jasmine or basmati rice steamed.

salt and pepper (to season)
2 tablespoons olive oil
1 teaspoon chopped garlic (fresh)
1 tablespoon chopped shallot
2 peaches (peeled and chopped)
1 teaspoon sugar
1 whole lemon

Steps:

  • In a large bowl, mix together flour, salt, oregano, thyme and lemon pepper. Roll scallops in flour mixture until lightly coated on all sides.
  • Heat olive oil in a skillet or frying pan over high heat. Add 4 scallops to the pan and sear on all sides (about 2 minutes for each side). After turning scallops, add 1 tablespoon parsley and 1 teaspoon lemon juice. Remove scallops from pan and place on a plate in the oven to keep warm until ready to serve.
  • Repeat until remaining scallops are cooked, tossing each batch with parsley and lemon juice.

SEARED SEA SCALLOPS WITH SPICY CARROT COULIS

A coulis, pronounced koo-LEE, is a thin, pourable sauce, often made from tomatoes for savory dishes, or from berries for desserts. This brilliant orange sauce gets a splash of vinegar for a hit of acidity and a pinch of cayenne for heat, a perfect foil for the scallops' sweetness. For the best flavor, use young bunch carrots, not large "horse carrots." This is a very easy dish if the sauce is prepared in advance. (Make the sauce up to a day ahead. If made in advance, reheat to serve.) Then it's just a matter of searing the scallops and assembling the plates.

Seared Sea Scallops With Spicy Carrot Coulis image

Steps:

  • Make the coulis: Put carrots, garlic, onion, vinegar, cayenne, salt, honey and broth in a saucepan over high heat. Bring to a boil, then reduce to a simmer. Cook until carrots are very soft, about 15 minutes. Purée all ingredients thoroughly in a blender and strain if necessary - it should be very smooth. Taste, and adjust seasoning. Coulis should not be too thick, but rather similar to a thin milkshake. Keep warm if not made ahead.
  • Prepare the scallops: Set 2 wide cast-iron skillets or a large griddle over medium-high heat. When pan is hot, film with olive oil. As oil heats and just before cooking, season scallops with salt and pepper on both sides. When oil is wavy, place scallops in pan without crowding. Leave scallops undisturbed to brown well and crisp on one side, about 4 to 5 minutes. Flip and cook for 1 to 2 minutes more, until cooked through, but juicy. Place scallops browned side up on paper towels to blot bottoms.
  • To serve, ladle about 1/4 cup warm coulis onto individual warmed dinner plates. Set scallops on top, browned side up. Sprinkle with cilantro, chives and sliced chiles. Serve with lime wedges.
