GRILLED SESAME STEAK

This is a grill recipe my wife and I have been making for over 30 years. The sesame flavor is fantastic, and the London broil comes out tender as can be. Turn it twice per side to get the diamond-shaped grill marks and people will rave!

Grilled Sesame Steak image

Steps:

  • Heat sesame oil in a skillet over medium-high heat. Cook and stir sesame seeds in hot oil until golden brown, about 1 minute. Transfer seeds and oil immediately to a large glass or ceramic baking dish.
  • Stir onions, soy sauce, lemon juice, sugar, garlic, and peppercorns into sesame mixture until marinade is evenly combined. Place steak into marinade, turning to coat all sides. Cover baking dish with plastic wrap and refrigerate, turning steak often, for at least 4 hours or up to overnight.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Cook the steak on the preheated grill until meat starts to firm and turns reddish-pink and juicy in the center, about 10 minutes per side. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C) for medium rare. Transfer steak to a plate, cover with aluminum foil, and let rest for about 10 minutes. Slice across the grain.

Grilled London Broil with a Sesame-Soy-Brown Sugar Marinade Recipe - (4.5/5) image

Steps:

  • Whisk together oil, Worcestershire, soy sauce, brown sugar, sesame seeds, ginger, garlic powder and dry mustard. Pour over London Broil in a 9 x 13 pan and marinate for least 24 hours and up to 48 hours. If marinade does not completely cover the meat, turn the meat several times during the marinade period. Bring the meat to room temperature before grilling otherwise you will have to cook it too long and the meat will be tough. Let the meat cook for 15 minutes on one side, 10 minutes on the other. If you are not sure use a meat thermometer and cook until medium. It will continue to cook after you remove it from the grill so don't leave it on too long. While the meat is resting, place a few pats of butter on top. They will melt and give the meat a richer flavor. Slice the meat as thinly as you can against the grain. If you totally screw up and cook the meat too long and it's tough, melt some butter and hit it with a bit of soy sauce and drizzle it over the meat, no one will ever know.

  • Mix all ingredients and pour over London Broil in a ziploc bag.
  • Marinade the meat in the refrigerator for at least 1 hour (or freeze at this point to thaw and cook later).
  • Heat a grill to medium high.
  • Grill for 10-12 minutes/side, depending upon thickness.
  • Let the meat rest for 5 minutes before slicing thinly across the grain.
  • Meanwhile, boil the remaining marinade for 5 minutes on the stovetop and serve over the London Broil.

Steps:

  • Mince the garlic to a paste with salt and in a blender blend with the salt, red wine, balsamic vinegar, soy sauce and honey.
  • In a heavy-duty sealable plastic bag, combine London broil with marinade. Seal bag, pressing out excess air, and put in a shallow baking dish. Marinate steak, chilled, turning occasionally, at least 4 hours and up to 24.
  • Bring steak to room temperature before grilling. Remove steak from marinade, letting excess drip off, and grill on an oiled rack set 5 to 6 inches over glowing coals, 7 to 9 minutes on each side for medium-rare. Transfer steak to a cutting board and let stand 10 minutes.
  • Holding a knife at a 45-degree angle, cut steak across grain into thin slices and serve with tomatoes.

  • Mix shallots, soy sauce, olive oil, thyme, hot sauce and lemon juice together in a non-reactive broiling pan. Score the steak, place it in the pan and turn in the marinade. Marinate for at least 2 hours at room temperature or up to 24 hours refrigerated. If refrigerated, turn the steak in the marinade occasionally. Drain off marinade and put into a saucepan. Place steak under broiler at 1 inch from the heat for 3 to 4 minutes on each side for rare, for 4 to 5 minutes on each side for medium. Leave the broiler door slightly ajar, so the heat stays on and air circulates. Meanwhile bring marinade to the boil. Remove from heat. Carve the meat in thin diagonal slices across the grain. BROILED SESAME SALMON

My mom clipped this recipe out of the Chronicle years ago and it's been a family favorite ever since! It's SO easy and quick to make and is SO delicious that even people who think they don't like salmon will LOVE it. Just remember not to over-cook the salmon. It should be dark pink and slightly translucent in the center. I've found if I take it out of the oven when it still looks only half done, it's perfect by the time I serve it.

Steps:

  • To make marinade, in a small bowl, combine soy sauce, vinegar, syrup, lemon juice, and ginger; whisk to blend.
  • Place salmon pieces in a nonreactive (not aluminum) container.
  • Pour marinade over them and turn to coat. Refrigerate 1 hour.
  • Preheat broiler. Spray a nonstick broiler pan with olive oil.
  • Place salmon, skin side up, on pan and transfer marinade to a small saucepan.
  • Broil salmon 4 inches from heat for 4 minutes. Meanwhile, bring marinade to a boil; simmer 2 minutes.
  • Turn salmon, baste with marinade, sprinkle with sesame seeds and broil another 4 minutes or until just cooked through.
  • Fish and marinade can be served hot, at room temperature or chilled. Spoon a tablespoon of boiled marinade over each piece; garnish with green onion.
