Crock Pot Broccoli Cheese Soup image

Steps:

  • 1. Saute onion and green peppers in butter
  • 2. Combine all ingredients in Crock Pot
  • 3. Cook on low for 3-4 hours

1/2 c green pepper, chopped
1/2 c onion, chopped
2 Tbsp margarine
1 can(s) cream of chicken soup
1 1/2 c milk
1 lb velveeta cheese, cubed
10 oz broccoli, chopped

SHANNON'S CROCKPOT BROCCOLI CHEESE SOUP

My sister in law found this recipe and I think it might be the best broccoli cheese soup I have ever eaten! The recipe calls for condensed cream of potato soup but they could easily be substituted for condensed cream of celery or chicken and I believe it would be just as good!

Steps:

  • Place all ingredients in crock pot and cook on low for 2-4 hours.
  • We top soup with shredded cheese and croutons before serving but that is optional.

1 (32 ounce) bag frozen broccoli florets
2 (10 3/4 ounce) cans condensed cheddar cheese soup
2 (10 3/4 ounce) cans condensed cream of potato soup
1 quart half-and-half cream

Slow-Cooker Cheesy Broccoli Soup image

Steps:

  • In a small skillet, heat butter over medium-high heat. Add onion; cook and stir 3-4 minutes or until tender. Transfer to a 3- or 4-qt. slow cooker. Add broccoli, broth, milk and pepper., Cook, covered, on low 3-4 hours or until broccoli is tender. Stir in process cheese until melted. Add shredded cheeses; stir until melted. Just before serving, stir soup to combine. Top servings with additional cheddar cheese.

  • Add about 2 cups of broccoli. I suggest frozen baby florets which are small in size. If you use bigger frozen broccoli, you should chop it up some before adding. Or you can use fresh. The broccoli needs to fit in a spoon.
  • Mix well and cook on low for 2 hours. Check that the broccoli is tender. If not, extend the cooking time by 30-60 minutes. All crock pots cook differently.
