EASY NO-BAKE CHEESECAKE PARFAITS

When it comes to digging your spoon into a tall glass of deliciousness, there's no party quite like a cheesecake parfait party. Sweeten up the deal by bypassing the oven in favor of this 15-minute no-bake cheesecake.

Easy No-Bake Cheesecake Parfaits image

Steps:

  • Beat the cream cheese, 3 tablespoons heavy cream and 5 tablespoons sugar in a stand mixer fitted with the paddle attachment until smooth. Add 1 tablespoon vanilla extract and the lemon juice and zest. Beat until light and creamy, about 3 minutes.
  • Whisk together the remaining 1 cup heavy cream, 3 tablespoons sugar, 1 teaspoon vanilla extract and the sour cream in a large bowl with a handheld electric mixer (or a stand mixer fitted with the whisk attachment) on high speed until soft peaks form.
  • Add a layer of crushed graham crackers to the bottom of each parfait glass. Top the graham crackers with a layer of the cheesecake, then a layer of fruit (see Cook's Note). Top each parfait with a dollop of the whipped cream and serve.

Two (8-ounce) packages cream cheese, at room temperature
1 cup plus 3 tablespoons chilled heavy cream
1/2 cup (8 tablespoons) sugar
1 tablespoon plus 1 teaspoon vanilla extract
1 tablespoon fresh lemon juice
2 teaspoons lemon zest
1/4 cup sour cream
1 1/2 cups crushed graham crackers
1 1/2 cups fresh fruit, such as strawberries, blueberries or raspberries

Steps:

  • In a small bowl, combine sliced strawberries and sugar; set aside. In a small mixing bowl, beat the cream cheese and 1/3 cup confectioners' sugar. Add the sour cream, 1/4 teaspoon vanilla and almond extract.
  • In a small mixing bowl, beat cream until it begins to thicken. Add the remaining confectioners' sugar and vanilla; beat until soft peaks form. Fold into cream cheese mixture.
  • In two parfait glasses, layer a fourth of the sliced strawberry mixture, cake cubes and cream mixture. Repeat layers. Cover and refrigerate for at least 1 hour. Top each parfait with two strawberry halves.

2 cups sliced fresh strawberries
1 tablespoon sugar
1 (3 ounce) package cream cheese, softened
1/3 cup confectioners' sugar, plus
1 teaspoon confectioners' sugar, divided
1/4 cup sour cream

Steps:

  • Mix the skim milk, cream cheese, and lemon zest and juice together until well combined (no lumps!).
  • Add pudding mix and blend well.
  • Add about 1 tbsp.
  • noncalorie sweetener and mix well, set aside.
  • Sweeten strawberries to taste with sweetener.
  • In 3 parfait glasses (Wal-mart sells some cute plastic ones) start with 1 graham cracker, broken in half.
  • Place about 2 tablespoons of strawberries in each.
  • Cover with 5 tablespoons of pudding mixture.
  • Place 2 graham crackers in each glass, and cover with 2 tablespoons of strawberries, then 5 tablespoons of pudding mixture.
  • Continue until all of the ingredients are used up.
  • Serve immediately.
  • If not serving immediately, use reduced fat Nilla wafers or thin slices of sugar free fat free angel food cake.
