ITALIAN STYLE MEATLOAF I
Made with mozzarella cheese and Italian seasoning, this is a different twist on everyday meatloaf! Enjoy!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, mix together ground beef, eggs, bread crumbs and ketchup. Season with Italian-style seasoning, oregano, basil, garlic salt, diced tomatoes and cheese. Press into a 9x5 inch loaf pan, and cover loosely with foil.
- Bake in the preheated oven approximately 1 hour, or until internal temperature reaches 160 degrees F (70 degrees C).

ITALIAN MEATLOAF

- Preheat oven to 350 degrees F.
- Heat 1/4 cup of the olive oil in a medium saute pan over medium heat and add the garlic. Saute 1 minute and then add the peppers and onions and saute until just soft. Let cool.
- Whisk together the basil, parsley and eggs in a small bowl, and then add the salt and black pepper. Combine the Parmesan and breadcrumbs in another small bowl. Thoroughly combine the meat, herbs and eggs, Parmesan and breadcrumbs, the Worcestershire, vinegar and remaining 2 tablespoons olive oil together in a large bowl using your hands, making sure not to overmix.
- Pack the meat mixture into an oiled loaf pan, if you do not have a loaf pan, form the meat mixture into a loaf shape on an oiled oven tray or baking dish. Top with the marinara making sure to spread evenly over the top.
- Bake for approximately 50 to 60 minutes or until an instant-read thermometer registers 160 degrees F in the middle of the meatloaf. Remove from the oven and let rest for 5 minutes. Slice and serve.
SHELIA'S ITALIAN MEATLOAF
This is comfort food at its best with an Italian twist. It is savory, delicious, and filling. My mother always made meat loaf with these seasonings and I learned it this way and this is the only meat loaf I make. It has been a favorite in our family for many years. I've been making this for so long that I can dump and pour and it always turns out good, however, I made the meatloaf using these measurements so I could share the recipe and it turned out perfect.

- Crumble meat into a large bowl, add the next 11 ingredients and mix well I use my hands, until the ingredients are thoroughly incorporated. Spray the loaf pan with cooking spray. Shape the meat mixture into the loaf pan leaving space between the inside walls of the pan and the meat. Place in a preheated 350 degree oven. Cook for 40 to 45 minutes. Remove and pour the tomato sauce over the cooked meat. Return to the oven and cook an additional 10 minutes.

- For the meatloaf: Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.
- Heat the olive oil in a medium skillet over medium heat. Add the garlic, onion, bell pepper and crushed red pepper if using and saute until the vegetables are tender, about 5 minutes. Set aside to cool.
- In a large bowl, combine the beef, Parmesan, breadcrumbs, parsley, Worcestershire sauce, garlic salt, kosher salt, pepper, basil, eggs, 1/2 cup of the marinara and the cooled vegetables. Use your hands to mix everything together. Transfer the mixture to the center of the prepared baking sheet and form into a loaf. Coat the meat loaf with the remaining 1/2 cup marinara.
- Bake until the meat loaf is firm, 45 minutes to 1 hour (depending on the shape of your loaf). Let set for about 5 minutes before slicing.
- For the sandwiches: Butter the rolls and then sprinkle with garlic salt. Transfer to a baking sheet and bake until light golden and toasted, about 5 minutes.
- Add a slice of meatloaf to each toasted roll and top with some of the marinara and 3 slices mozzarella. Return to the oven and bake until the cheese is melted, 8 to 10 minutes.

- 1. Combine ¼ cup of the warm water with the yeast and allow it to sit for 10 minutes and then stir. Combine the yeast and the rest of the warm water with the next 5 ingredients in a large mixing bowl and stir until mixed well. If mixing dough by hand, stir thoroughly adding flour a little at a time until all of it is incorporated. Turn dough out onto a floured board and cover with a cloth and allow it to rest about 20 minutes. Have 1/4 to 1/3 cup of flour nearby to incorporate into the dough if necessary while kneading the dough. Knead the dough about 10 minutes. If using a kitchen aid mixer combine ingredients with the paddle and after adding half the flour take off the paddle attachment and put on the dough hook and continue adding the flour, about ½ cup at a time, until it is all incorporated. You can add another ½ cup of flour if necessary to stiffen the dough a little and let the kitchen aid continue to knead the dough about 5 minutes. Turn out onto a floured board and cover and rest the dough for 20 minutes.
- 2. Place the dough in a greased bowl turning once to grease top. Cover with a clean towel and let rise until doubled, about, 40 minutes. Punch dough down and knead for a few minutes until smooth and then form into a loaf and place in a greased loaf pan. Cover with a cloth and let rise in a warm place until almost doubled in size about 40 minutes to 1 hour. Bake in a preheated 350 degree oven for 30 to 35 minutes. Remove bread from oven and allow to rest in pan a few minutes. Remove loaf to a wire rack and cover with a cloth. This bread can be frozen.
