THE BEST SHRIMP AND GRITS
This southern staple is full of flavor and plenty saucy. We tried using bacon, but missed the spiciness and complexity of andouille sausage. For added richness, we cook the grits in milk and finish them with butter.

Steps:
- Bring the milk, 2 cups water, 2 3/4 teaspoons salt and the sugar to a boil in a large saucepan over medium-high heat. Vigorously whisk in the grits until the liquid comes back to a boil. Reduce the heat to low, cover and simmer, whisking occasionally and scraping the bottom and sides of the pan to prevent sticking, until the grits are tender and thick, 35 to 45 minutes. Whisk in the butter until melted. Cover and set aside until ready to serve.
- Meanwhile, heat 1 tablespoon of the oil a large skillet over high heat until you see wisps of smoke rising from the pan. Cook half the shrimp until lightly browned on both sides, about 1 minute per side. Transfer to a large bowl. Repeat with 1 more tablespoon of the oil and the remaining shrimp.
- Reduce the heat to medium-high and add the andouille in an even layer. Cook undisturbed until browned on one side, about 1 minute. Transfer to the bowl with the shrimp.
- Heat the remaining 2 tablespoons oil in the same skillet and add the garlic, bell peppers, onions, jalapeno, 1 teaspoon salt and 1/4 teaspoon pepper. Cook, stirring occasionally, until caramelized and tender, 8 to 10 minutes. Add the tomato paste and cook, stirring constantly, until brick-red colored, about 1 minute. Add the wine to deglaze the skillet, scraping up any browned bits from the bottom. Cook until the sauce reduces and you can no longer smell any alcohol, 2 to 3 minutes. Add the shrimp, andouille, any accumulated juices and 1/4 cup water and cook until the sauce is slightly reduced and the shrimp are cooked through, about 2 minutes. Season with salt and pepper.
- Divide the warm grits among plates. Serve the shrimp and andouille over the grits. Garnish with the scallions.
HERBAL SHRIMP DELIGHT WITH BEER SAUCE
Steps:
- In a medium bowl, toss together basil, oregano, parsley, spinach, romaine lettuce, 3 tablespoons olive oil, and white wine.
- In a small bowl, blend the flour and water to a paste.
- Heat 1 tablespoon olive oil in a medium saucepan over medium high heat, and saute the onion, green onion, and garlic 5 minutes, until tender. Mix in the tomato. Reduce heat to low, and blend in the flour and water. Cook and stir until thickened. Mix in the beer and lime juice, season with salt and pepper, and simmer while cooking the shrimp.
- Heat remaining olive oil in a separate medium saucepan. Saute the shrimp about 3 minutes on each side, until opaque.
- Remove shrimp from heat, and finely chop while warm. Serve over the herb and greens mixture, and drizzle with beer sauce. Sprinkle with Parmesan and freshly ground black pepper.

SHRIMP DELIGHT
This is one of the first dishes I learned to cook and it is easy and delicious.

Steps:
- 1. Melt butter and place in a baking dish. Add your ingredients and mix well. Make sure your mixture is soupy.
- 2. Bake 1 hour covered. After 30 minutes, stir and return to oven.
- 3. After one hour check to make sure your rice is done. If it is, remove the pan. If it it isn't quite soft enough and you don't have any more moisture in the pan simply add a half cup of broth or water and return to the over for another 20 minutes.
SHRIMP DIP DELIGHT
This recipe comes from the New Orleans cookbook entitled "Jambalaya" which was the official cookbook of the 1984 Louisiana World Exposition. It is a very easy and flavorful dip. You must refrigerate it for the best flavor. Preparation and cook time does not include refrigeration time.

Steps:
- Bring large pot of salted water to boil and add shrimp.
- Boil shrimp for approximately 5 minutes or until done (do not overcook).
- In large bowl blend cream cheese with onions, celery, lemon juice, parsley, salt, cayenne pepper and mayonnaise.
- Gently fold in shrimp.
- Cover and refrigerate for at least 8 hours or overnight.
SHRIMP DELIGHT RECIPE

- Saute onion, bell pepper, and shrimp in oleo. Season with salt and pepper (or for more New Orleans taste, season instead with Toni Cacharies seasoning, Zatarains creole seasoning, or McCormick's creole seasoning). Put in 9- by 13-inch pan, cover with foil, and bake at 350 degrees for 30 minutes. Then stir and cook for another 30 minutes or until rice is cooked. This recipe yields ?? servings.

I got this recipe from a co-worker. The first time I made it, my boys ate all of it. The next time I added a second pound of shrimp with the same amount of marinade. My boys ate all of that as well. I always serve over rice.

- Thaw shrimp according to directions.
- Remove shells.
- Cut Yellow Pepper into 1/2 inch chunks.
- Mix all ingredients and marinade 1/2 hour.
- Cook in 450 degree oven for 10 minutes
