SIMPLE SESAME NOODLES

Steps:
- Bring a large pot of water to a boil. Cook the noodles according to the package instructions.
- Meanwhile, whisk together the soy sauce, canola oil, sesame oil, sugar, vinegar, chili oil and garlic in a bowl. Taste and adjust the ingredients as needed.
- Drain the noodles. Pour the sauce over the warm noodles and toss to coat. Sprinkle with the green onions and toss. Serve in a bowl with chopsticks. Yummy!
SIMPLY SESAMES
My kitchen counter is covered with these crispy crowd-pleasers at Christmastime. I make them for friends and family. I also add them to care packages our church delivers to area senior citizens.

Steps:
- In a bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add flour; mix just until combined. Stir in coconut, sesame seeds and almonds. Chill for 15 minutes. , Divide dough in half. Shape each portion into a 2-in.-diameter roll. Wrap each roll in waxed paper, twisting ends to seal. Refrigerate for 2 hours or overnight. , Remove waxed paper. Cut dough into 1/4-in. slices; place on ungreased baking sheets. , Bake at 300° for 20-25 minutes or until lightly browned. Cool for 2 minutes; remove to wire racks to cool completely.

SIMPLE SESAMES
This is a very simple recipe to make. The dough can be prepared ahead and baked when you are ready. I always get requests for the recipe for these. I "think" I got this from Bon Appetit years ago, but I'm really not sure.

Steps:
- In large mixer bowl cream butter.
- Gradually add sugar and continue beating until light and fluffy.
- Add flour and mix just until combined.
- Stir in sesame seed, coconut and almonds just until well mixed.
- Divide dough into thirds.
- Place one third on long sheet of wax paper.
- Shape into a long roll 2 inches in diameter.
- Repeat with remaining dough.
- Wrap and refrigerate until firm.
- Preheat oven to 300°F.
- Cut rolls into 1/4-inch slices.
- Bake on ungreased cookie sheets 30 minutes.
- Remove to wire racks to cool.

AUNT ANNE'S SESAME COOKIES
After trying my hand at countless sesame cookie recipes, my Italian girlfriend shared her Aunt Anne's recipe and I knew my search had ended! Basically an anise flavored butter cookie covered in sesame seeds. The smell when removing them from the oven is wonderful!

- Preheat the oven to 350 degrees F (175 degrees C).
- In a large bowl, cream together the butter and sugar until smooth. Beat in the egg and anise extract until well blended. Sift together the flour, baking powder and salt; stir into the butter mixture until well incorporated. If you are using a stand mixer, let the dough mix for another minute to add lightness to the dough. The dough will be soft, but will hand roll easily.
- Pinch off pieces of dough slightly smaller than a walnut, and roll them into small logs. Dip in milk, then roll in sesame seeds. Place cookies one inch apart on a cookie sheet. Cookies will not spread very much.
- Bake for 17 to 20 minutes in the preheated oven, or until bottom and sides of cookies are lightly toasted. Remove from cookie sheets to cool on wire racks. Store in an airtight container at room temperature.

PERFECT SESAME CHICKEN
If you want the perfect sesame chicken recipe this is it! You may want to increase the vinegar or lower the amount of sugar. It all depends on how sweet you want the sauce.

- Sift flour, 2 tablespoons cornstarch, baking soda, and baking powder into a bowl. Pour in low-sodium soy sauce, sherry, 2 tablespoons water, vegetable oil, and a dash of sesame oil; stir until smooth. Stir in chicken until coated with the batter, then cover, and refrigerate for 20 minutes.
- Meanwhile, bring chicken broth, sugar, vinegar, dark soy sauce, sesame oil, chile paste, and garlic to a boil in a saucepan over high heat. Dissolve 1/4 cup cornstarch into 1/2 cup of water, and stir into boiling sauce. Simmer until the sauce thickens and turns clear, about 2 minutes. Reduce heat to low, and keep sauce warm.
- Heat olive oil in a deep fryer or large saucepan to a temperature of 375 degrees F (190 degrees C).
- Drop in the battered chicken pieces, a few at a time, and fry until they turn golden brown and float to the top of the oil, 3 to 4 minutes. Drain on a paper towel lined plate. To serve, place fried chicken pieces onto a serving platter, and pour the hot sauce overtop. Sprinkle with toasted sesame seeds to garnish.
