- Rub steak with Cajun seasoning; let stand for 5 minutes., In a large skillet, cook steak in oil over medium-high heat for 7-10 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Remove and keep warm., In the same skillet, saute mushrooms and leek in butter until tender. Add garlic; cook 1 minute longer. Add the wine, pepper and salt, stirring to loosen browned bits from pan. Bring to a boil; cook until liquid is reduced by half. Slice steak; serve with mushroom sauce.

GRILLED SIRLOIN STEAK WITH MUSHROOM-WINE SAUCE
Steps:
- 1. To prepare wine sauce, saute mushrooms, garlic and onion in melted butter in saucepan until mushrooms are tender.
- 2. Add flour, stirring until blended; cook over medium heat for 1 minute, stirring constantly.
- 3. Blend in tomato paste, salt and pepper; stir in wine and stock until well-blended.
- 4. Simmer 20 minutes, stirring occasionally.
- 5. Adjust seasoning if necessary.
- 6. Sprinkle steaks with lemon pepper.
- 7. Grill steaks over moderately hot coals for 5 to 8 minutes per side for medium rare, or to a desired degree of doneness.
- 8. Serve with mushroom-wine sauce.
- 9. Serves 4.

PEPPER STEAK WITH PORT, ZINFANDEL, AND MUSHROOM SAUCE
Steps:
- Melt 2 tablespoons butter in heavy large nonstick skillet over medium-high heat. Add shallots; sauté 2 minutes. Add mushrooms; cover and cook 5 minutes. Uncover and sauté until mushrooms are browned, about 10 minutes. Add flour and stir 1 minute. Add Zinfandel, Port, and broth. Boil until sauce thickens enough to coat spoon thinly, stirring occasionally, about 10 minutes. Season sauce to taste with salt and pepper. Set aside.
- Meanwhile, place steak between sheets of waxed paper. Using mallet or rolling pin, pound steak to 1/2-inch thickness. Coat both sides of steak with 3/4 teaspoon pepper and 1/2 teaspoon salt. Melt remaining 1 tablespoon butter in another heavy large skillet over medium-high heat. Add steak to skillet and cook to desired doneness, about 2 minutes per side for medium-rare. Transfer steak to work surface; do not clean skillet. Add mushrooom sauce to skillet; bring to simmer, scraping up any browned bits.
- Thinly slice steak; transfer to platter. Spoon mushroom sauce over and serve.
SIRLOIN STEAK WITH MUSHROOM MARSALA SAUCE

- Begin the Marsala sauce by heating the olive oil in a large saute pan. Cook the shallots (or onion) and mushrooms gently until they become translucent. Deglaze the pan with the wine and add the stock and fresh thyme. Allow to reduce by two-thirds.
- Preheat the grill to medium-high heat and season meat on both sides with salt and pepper. Sear the meat on both sides, and grill to about 128 degrees F internal temperature for medium-rare. Remove meat from grill and let rest.
- Strain Marsala sauce and whisk in butter to finish. Season with salt and pepper, as needed. Spoon the sauce over the grilled steaks, garnish with chopped chives, and serve.
SIRLOIN STEAKS WITH PORT-RED ZINFANDEL & MUSHROOM SAUCE
This is a fantastic and quick way to make a steak with a wonderful sauce. From Bon Appetit "Too Busy To Cook." If you don't have port on hand, just use 1 1/2 cups red wine.

- Melt 2 T butter in large nonstick skillet over medium high heat.
- Add shallots and saute 2 minutes.
- Then add mushrooms, cover pan, and cook about 5 minutes, then uncover and cook 5 minutes more until browned.
- Add flour and stir for 1 minute.
- Next add zinfandel, port and broth.
- Bring to a boil and boil sauce down, stirring occasionally, until sauce thickens enough to coat a wooden spoon thinly.
- Season sauce to taste with salt and pepper and set aside.
- Pound steak between two sheets of wax paper to about 1/2 inch thickness.
- Coat both sides with salt and pepper.
- Melt remaining 1 T butter over medium-high heat in another large skillet (I don't use nonstick for this).
- Cook steak about 2 minutes per side (for medium rare) or longer to suit your preferences.
- Transfer steak to a plate.
- Add mushroom sauce to the steak pan, bring to a simmer, scraping up any browned bits on the pan.
- Serve.

SIRLOIN WITH RED WINE AND MUSHROOM SAUCE

- In a large shallow glass dish, stir together the mushrooms and wine. Add the beef, turning to coat. Cover and refrigerate for 8 to 12 hours, turning occasionally.
- In a small bowl, stir together the tomato sauce, green onions, bouillon granules, basil, sugar, oregano, garlic powder, and salt. Set aside.
- Lightly spray a large skillet with cooking spray. Heat over medium-high heat. Drain the beef well, reserving the marinade. Cook the beef for 4 minutes. Turn over. Cook for 2 minutes, or to the desired doneness. Transfer to a cutting board. Set aside.
- Pour the reserved marinade and the tomato sauce mixture into the skillet, scraping the bottom and side to dislodge any browned bits. Cook over medium-high heat for 3 minutes, or until the liquid is reduced to 1 cup, stirring occasionally. Remove from the heat.
- Slice the beef and transfer to plates. Spoon the mushroom sauce over the beef. Sprinkle with the parsley.
