- Preheat oven to 350°F. In a covered large saucepan, cook potatoes in enough boiling water to cover for 15 to 20 minutes or until tender. Drain. Mash with a potato masher or beat with an electric mixer on low speed. Season with the salt and pepper. If necessary, add a small amount of milk for desired consistency.
- Grease four 10- to 12-ounce individual casseroles or custard cups or a 1- to 1 1/2-quart casserole. Spoon potato mixture into prepared casserole(s). In a chilled medium bowl, beat whipping cream with chilled beaters of an electric mixer on medium speed until soft peaks form (tips curl); fold in sour cream and cheese. Spoon cheese mixture over potatoes. Place casserole(s) on a baking sheet. Bake about 20 minutes or until lightly browned and heated through.

- Place potatoes in a large saucepan; cover with water. Cover and bring to a boil. Cook for 20-25 minutes or until very tender; drain well., In a bowl, mash potatoes. Add cream cheese, cheddar cheese, sour cream, onion, egg, salt and pepper; beat until fluffy. Transfer to a greased 2-qt. baking dish. - Place the potatoes in a large pot and cover with water by an inch. Bring to a boil over high heat, then reduce to simmer. Cook until the potatoes are fork tender, 25 to 30 minutes. Drain.
- Return the potatoes to the pot and add the butter, milk and some salt and pepper. Mash the potatoes to the desired consistency. While still hot, fold the cheese into the mash and stir to melt.
CHUNKY, SKIN-ON MASHED POTATOES RECIPE BY TASTY

- Add the potatoes to a large pot and cover with cold water. Add the salt. Bring to a boil over high heat and cook until the potatoes are fork-tender, about 20 minutes longer. Drain and return to the pot. Set aside.
- In a small pot over medium heat, bring the butter, cream, and garlic to a simmer. Once simmering, remove from the heat.
- Pour the cream mixture over the potatoes. Add the sour cream, then mash with a hand masher until the potatoes are creamy, but still very chunky. Season to taste with salt and pepper.
- Garnish with green onions, if desired.
- Note: Any small waxy potato would work well in this recipe - such as Yukon Golds or new potatoes.

- Cover saucepan and bring to a boil over high heat. Then, reduce heat to medium and boil gently, partially covered, until potatoes are tender, from 20 to 30 minutes.

- Peel and cut the potatoes, place in a large pot filled with water and a dash of salt. Bring to a boil then reduce to a med-high, let cook for at least 20 minutes or until you can easily pierce the potatoes with a fork.
- Drain the potatoes, add the milk and butter then using either an electric or hand masher mash them til they are nice and creamy.
- In a bowl beat together the cream cheese, sour cream, seasonings, garlic, 2/3 cup cheddar cheese and 1/4 cup of parmesan cheese (the remaining cheddar and parm will be sprinkled on top) stir this mixture into the mashed potatoes, don't over mix it though, just gently fold it in. If you can add the dairy ingredients at room temp it will give you a creamier potato.
