SLICED, BAKED CABBAGE
I made this one night to go along side a casserole. I was short options for a vegetable dish, and this is what I came up with. It turned out wonderful. This is for 2 servings. I like to use the leftover cabbage for coleslaw or chopped cabbaged gives a lovely texture to lettuce salads.

Steps:
- Preheat oven to 375°F.
- Line a sheet pan with foil. (I used an 8x2").
- Treat the pan with 1 Tbsp of olive oil and spread to coat evenly.
- Slice cabbage with core-side down. You should end up with 6-8 slices. Don't slice into core. Just use sides of the cabbage.
- Place sliced cabbage in two rows, each slice slightly overlapping.
- Drizzle 2 Tbsp of olive oil and apple cider vinegar over each row. (If your cabbage is rather large, increase it to 3 tablespoons Again, use your own judgement).
- Next, sprinkle on Caraway seeds, garlic powder and salt-n-pepper.
- Cover with another sheet of foil.
- Bake for 45 min - 1 hour -- ovens vary.
- To serve, arrange slices along side your favorite meat dishes or casseroles.
- Variation: You can also add sliced bell pepper and sweet onion to this, by putting the vegies in between the sliced cabbage.

Delicious, roasted cabbage! I apologize for not having a measurement for you! I do not typically measure. If anybody tries this and would like to give tips on measurements, please feel free!

- Preheat oven to 450 degrees F (230 degrees C).
- Brush both sides of each cabbage wedge with olive oil. Sprinkle garlic powder, red pepper flakes, salt, and pepper over each wedge. Arrange wedges on a baking sheet.
- Roast in the preheated oven for 15 minutes; flip cabbage and continue roasting until browned and charred in some areas, about 15 minutes more. Squeeze lemon over each wedge.

CABBAGE STEAKS
One of my favorite side dishes, as it's very easy to make! I personally love garlic so I go crazy with it, but put as much as is good for you. This is a very simple recipe and you can put as much or as little of the seasonings you want.

- Preheat oven to 350 degrees F (175 degrees C).
- Cut the bottom off of the cabbage and set it so that the flat end is on the cutting board; cut into 1-inch thick slices. Arrange slices in a single layer in a large casserole dish.
- Drizzle olive oil over the cabbage slices and top with garlic. Season cabbage with salt and pepper. Cover the dish with aluminum foil.
- Bake in preheated oven until the cabbage core is easily pierced with a fork, about 45 minutes.

BAKED SEASONED CABBAGE SLICES
Here's an easy quick way to have some tasty cabbage in about 30 minutes from the oven. We love to eat this along with my BBQ pork steaks. Yum!

- 1. Preheat oven to 350. Use non stick spray on a foil lined cookie sheet with sides. Wash and remove any dirt or bad spots on the outside layer of cabbage and remove core from cabbage.
- 2. Make cabbage slices about 1/2 inch thick and lay flat on cookie sheet. Spread 1 Tbsp. of soft butter over top layer of cabbage.
- 3. Season with the garlic sea salt mixture and cracked pepper. Place in 350 oven and bake 30 minutes or until cabbage is tender but with a bite to it.
GARLIC LOVES ROASTED CABBAGE
If you're tired of the old boiled cabbage and like roasted veggies this will bring you back to one of our favorites. This is particularly good with ribs. Use crushed garlic to taste. I also like it a little burnt. Also watch out with those vegans because if you like leftovers you might have to make two pans at a time!

- Center a rack in the middle of the oven and preheat oven to 400 degrees F (200 degrees C).
- Slice each cabbage quarter into 1/2-inch or 1/4-inch wedges. Spread half of the cabbage in a large roasting pan. Season lightly with salt and black pepper; scatter 4 garlic cloves on top. Drizzle 2 tablespoons olive oil over cabbage; do not mix. Layer remaining cabbage on top. Season with salt and black pepper; scatter remaining garlic cloves on top. Drizzle remaining 2 tablespoons olive oil on top.
- Roast cabbage in the preheated oven until slightly softened, about 20 minutes. Add water if cabbage looks dry. Continue roasting until wilted, about 20 minutes more.

- Preheat oven to 400 degrees F. Generously coat a rimmed baking sheet with nonstick spray and set aside.
- Cut off the bottom (root) end of the cabbage and place it on a cutting board sitting up so that the flat end is on the cutting board. Cut top to bottom into 3/4- to 1-inch thick slices. Place on the prepared baking sheet. If you have more slices than fit on your baking sheet without touching, divide them between two baking sheets.
- In a small bowl, whisk together the olive oil, garlic, salt, and pepper. Brush over one side of the cabbage, then flip the cabbage over and brush the other side. DO NOT WALK AWAY during the last several minutes of baking. Nuts love to burn the second you do. Remove the pecans from the oven and transfer immediately to a cutting board (if you leave them on the hot pan and they are super toasted already, they may burn). Let cool, then roughly chop.
