CALIFORNIA AVOCADO HORSERADISH SPREAD/SAUCE

Fantastic on roast beef sandwiches (see my recipe #283972 #283972), alone on a toasted bagel, or with smoked trout, salmon or tiny shrimp! Or, makes a lovely appetizer served with mini-bagels and topped with a spiced nut--the possibilities are endless!

California Avocado Horseradish Spread/Sauce image

Steps:

  • Stir together all ingredients.
  • Chill 1 hour to marry flavors.
  • Serve on roast beef sandwiches, or on bagels with salmon. Makes a great appie served on mini-bagels, topped with a spiced nut.

3 avocados, roughly mashed
1/3 cup finely chopped onion
1/3 cup lemon juice
1/4 cup prepared horseradish (or to taste, depending on the strength of the horseradish)
1/2 teaspoon salt

Steps:

  • Stone and peel the avocados, cut into chunks and toss in half the lemon juice. Twist and fold the smoked salmon pieces onto serving plates, then scatter with the avocado. Cover and chill for up to 1 hr until ready to serve.
  • Mix together the tarragon, crème fraîche and remaining lemon juice. Drizzle over the salmon, scatter with the capers and serve straight away with wholemeal or soda bread.

Smoked Salmon Spirals image

Steps:

  • Using vegetable peeler, cut off thin 8x1-inch strips down length of daikon.
  • Mix cream cheese, dill, parsley, capers, mustard, lemon peel and pepper in small bowl. Spread about 1 1/2 teaspoons mixture on 1 side of each radish strip. Top with salmon. Roll up tightly. Arrange spiral side up on platter. Garnish with cucumber, dill and lemon.

1 daikon (Japanese white radish), peeled
4 ounces cream cheese, room temperature
1 tablespoon fresh dill, finely chopped or 1 teaspoon dried dillweed
1 tablespoon finely chopped fresh Italian parsley
2 teaspoons drained capers
1 1/2 teaspoons Dijon mustard
1/2 teaspoon grated lemon peel
1/8 teaspoon cracked pepper
4 ounces sliced smoked salmon, cut into 1-inch-wide strips
Cucumber slices
Fresh dill sprigs
Lemon slices

  • In a medium bowl, whisk the flour with the salt and sugar. Whisk in the milk, followed by the eggs and then the butter. Refrigerate for 1 hour.
  • In a small bowl, blend the mayonnaise with the chopped dill, lemon zest and juice and season with salt and pepper.
  • Heat a 6-inch nonstick skillet (measured across the bottom). Lightly oil a paper towel and use it to grease the skillet. Add about 3 tablespoons of the crêpe batter to the skillet, swirl to coat the bottom of the pan and pour the excess batter back into the bowl. Cook the crêpe over moderately high heat until browned around the edges, about 1 minute. Flip the crêpe and cook for about 30 seconds longer; transfer the crêpe to a baking sheet. Repeat with the remaining crêpe batter, rubbing the skillet with oil as needed and reducing the heat to moderate if the skillet gets too hot. You should have about 18 crêpes, but you'll only need 16.
  • On a work surface, arrange 4 crêpes overlapping in a row that measures 19 inches. Arrange another row of 4 overlapping crêpes just below to form a neat 19-by-9-inch rectangle. Spread half of the smoked salmon slices over the lower row of crêpes. Starting at the bottom of the rectangle, roll up the crêpes neatly and tightly around the salmon. Trim the ends and slice the roll crosswise into 1-inch spirals. Repeat with the remaining crêpes and salmon. Transfer the hors d'oeuvres to a large platter.
