Chocolate cookies coated in confectioners' sugar...very good!

Steps:
- In a medium bowl, mix together cocoa, white sugar, and vegetable oil. Beat in eggs one at a time, then stir in the vanilla. Combine the flour, baking powder, and salt; stir into the cocoa mixture. Cover dough, and chill for at least 4 hours.
- Preheat oven to 350 degrees F (175 degrees C). Line cookie sheets with parchment paper. Roll dough into one inch balls. I like to use a number 50 size scoop. Coat each ball in confectioners' sugar before placing onto prepared cookie sheets.
- Bake in preheated oven for 10 to 12 minutes. Let stand on the cookie sheet for a minute before transferring to wire racks to cool.

Steps:
- Combine sugar, oil, and melted chocolate in a large mixing bowl; beat at medium speed of an electric mixer until blended.
- Add eggs and vanilla, mixing well.
- Combine flour, baking powder and salt in a medium bowl.
- Add about one-fourth of dry mixture at a time to chocolate mixture, mixing after each addition.
- Cover and let chill at least 2 hours.
- Shape dough into 1-inch balls, and roll in powdered sugar.
- Place cookies 2 inches apart on lightly greased cookie sheets.
- Bake at 350 degrees F.
- for 10 to 12 minutes.
- Cool on wire racks.

- In a microwave, melt 1 cup chocolate chips. Stir until smooth; set aside. Beat butter and sugar until crumbly, about 2 minutes. Add egg whites and vanilla; beat well. Stir in melted chocolate. , In another bowl, whisk together flour, baking powder and salt; gradually add to butter mixture alternately with water. Stir in remaining chocolate chips. Refrigerate, covered, until easy to handle, about 2 hours., Preheat oven to 350°. Shape dough into 1-in. balls. Roll in confectioners' sugar. Place 2 in. apart on baking sheets coated with cooking spray. Bake until set, 10-12 minutes. Remove to wire racks to cool.

- To make brown butter, heat unsalted butter in a light color saucepan over medium heat. Once the butter melts, it will start getting foamy. Once the foam subsides, you’ll see clear bubbles. Continue cooking and stirring constantly to keep the butter from burning. Once the butter smells nutty and turns a caramel color, turn off the heat. This process will take about 7 - 9 minutes. Allow brown butter to cool to room temperature before using.
- Add egg and sugar to a large mixing bowl or a stand mixer bowl and beat until light in color and creamy, about 2 minutes. Add cooled brown butter and vanilla extract, and continue beating until light and fluffy, another 2 minutes.
- In another mixing bowl, sift together flour, cocoa powder, baking soda, and baking powder, then stir in the salt. Add the flour mixture to the wet ingredients and stir until incorporated.
