Sweet n Smokey Onion Rings image

Steps:

  • In a heavy bottomed pot, add enough oil to reach 4 inches up the sides. Preheat to 365 degrees F.
  • In a medium-sized bowl, combine the flour, paprika, onion powder, salt, and baking powder. In a small bowl, whisk together the buttermilk and egg. Add the wet mixture to the dry mixture, whisking the batter until just combined. In a medium bowl or wide baking dish, add onion rings and dust with flour. Toss gently to uniformly coat rings, and shake off excess flour. Working in batches, dip floured onion rings into the batter, making sure they are thoroughly coated, then carefully add to the preheated oil. Cook until deep golden, flipping halfway through if necessary, about 2 minutes. Remove the onion rings to a paper towel-lined plate and season immediately with salt. Transfer to a serving platter and serve hot. No ketchup needed!

Steps:

  • In a medium saucepan on medium-low heat, add the pearl onions, vinegar, sugar, shallots, red onions, a pinch of salt, a few grinds of pepper and 1/4 cup water. Stir to combine, then cook until the onions are completely tender and caramelized, 40 to 45 minutes.
  • Add the thyme and scallions to the cooked onions and refrigerate until ready to use. Serve on nachos, burgers, hot dogs, etc.

2 cups frozen pearl onions, defrosted and halved
1/4 cup apple cider or red wine vinegar
3 tablespoons light brown sugar
4 shallots, thinly sliced
2 large red onions, halved and thinly sliced

  • Crosscut peeled onions into 1/2-inch rings, discarding onion hearts. In separate container combine eggs, milk, and beer. Mix flour and baking powder thoroughly in separate container. Soak onions in milk mixture and coat onions in flour. This step is repeated a second time, and may be done a third time to insure that the entire onion is dusted with flour mixture. Fry onions in a deep fryer until golden brown.

Steps:

  • Heat 2 inches of oil in a Dutch oven to 370 degrees F.
  • Whisk together the sour cream and onion dip mix, 2 teaspoons of the onion powder and 1/2 teaspoon of the garlic powder in a large bowl (large enough to use for dredging). Set aside 2 tablespoons of the seasoning mixture for later. To the mixture in the bowl, stir in 1/4 cup of the flour. Set aside.
  • In a separate large mixing bowl, whisk together the remaining 1 cup flour, the cornstarch, remaining 2 teaspoons onion powder, the salt, baking powder and remaining 1/2 teaspoon garlic powder. Add the seltzer and sour cream and whisk until just smooth. Stir in the chives. The batter should be the consistency of thick paint.
  • Add the onion rings to the seasoned flour and toss to lightly coat. Working in 2 batches, dredge the floured rings in the batter, letting the excess drip back in the bowl, and add to the oil. Fry, flipping occasionally, until very crisp and deep golden, about 4 minutes per batch. Drain on a wire rack set over a baking sheet.
  • While still hot, season the onion rings with the reserved sour cream and onion seasoning mixture. Serve immediately, with ketchup.

  • Place oil in a deep skillet until it comes about 1-inch up the side of the pan. Heat oil to 360 degrees F.
  • Mix buttermilk, egg, and hot sauce in a medium bowl. Mix flour, cayenne, 1 teaspoon salt, and pepper in a bag. Pat onion slices dry and dip in the buttermilk mixture to coat. Transfer slices to bag and toss to coat. Deep-fry onions in batches until golden, about 2 minutes. Transfer to a paper towel-lined plate to drain, sprinkle immediately with salt, and serve.

Heat the shortenign in a large heavy pot to 350 degrees to 400 degrees or until very hot. Dip the onion rings into the egg mixture and then into the first bowl of dry mixture. Redip into the egg mixture and then into the second bowl of dry mixture. Add onion rings to the hot oil in small batches. Cook the onion rings for about 3 minutes or until golden brown. Remove with a slotted spoon or a long pronged fork to paper towels to drain. Salt to taste and serve immediately.
