BARIIS ISKUKARIS (SOMALI-STYLE RICE)

Somali-style rice, when prepared for festive occasions, can be a satisfying meal on its own: The rice is cooked in a rich stock and often jeweled with pieces of meat and vegetables. This version of the dish comes from Ayaan and Idyl Mohallim, twin sisters who make their own xawaash, an aromatic spice mixture that is layered with fenugreek and turmeric. The finished rice is also generously seasoned with saffron, as well as softened peppers and raisins. At Thanksgiving, the rice is a versatile side with roast turkey and vegetables, and the day after, it's a great base for leftovers. You could easily use a vegetable stock in place of a meat stock for a vegetarian version, and add more vegetables to the topping. The Mohallim sisters, on occasion, add blanched green beans to the mix.

Steps:

  • Soak rice in cold water 30 to 45 minutes, then drain.
  • Meanwhile, prepare the xawaash: Combine all the spices in a spice grinder and finely grind. Set aside.
  • Prepare the topping: Heat olive oil in a wide, deep pot over medium-high heat and add the onions, stirring occasionally until translucent. Add raisins and allow to soften, about 2 minutes, then add red bell pepper and cook until softened, about 5 to 7 minutes. Season with salt and set aside on a paper towel.
  • In the same pot, make the rice: Heat 1/2 cup oil. Add onions and sauté, stirring frequently, until softened, 6 to 8 minutes. Add garlic, cinnamon sticks, cardamom, cloves and xawaash and cook, stirring, 1 minute.
  • Stir in stock and rice. Bring to boil, then cover and cook on low heat 20 minutes. Stir in saffron and raisins and season to taste with salt. Cover, turn off heat and steam for 5 more minutes. Transfer to a serving platter, using a large spoon to pile rice in a heap onto a platter. Sprinkle topping over rice and serve.

RICE WITH EDAMAME

This dish is called mame gohan, the Japanese version of rice and beans. The beans are simmered in dashi seasoned with mirin and light soy sauce, and then the same cooking liquid is used for the rice. Before serving, the beans and rice are folded together, with a light dusting of salt and black sesame seeds.

Steps:

  • In a medium saucepan, combine 2 cups dashi broth, mirin, soy sauce and 1/4 teaspoon salt. Bring to a boil over high heat. Add edamame, reduce heat to medium, and cook 4 minutes. Place a colander over a medium heatproof bowl, and pour in contents of saucepan. Reserve broth and beans separately.
  • Place rice in a bowl, and rinse with cold water until water runs clear. Drain rice well in a fine strainer. In a medium saucepan, combine rice, reserved broth and kombu.
  • Cover saucepan, and place over high heat. When lid jiggles and foam begins to appear at its edges (in 3 to 4 minutes), reduce heat to medium and cook 10 minutes. Raise heat to high for 30 seconds, and then turn it off. Immediately remove kombu from pan and add edamame; do not stir. Cover pan, and remove from heat. Let sit 10 minutes.
  • With a wooden paddle or fork, mix beans into rice. Scoop rice into serving bowls, and sprinkle each portion with a teaspoon of black sesame seeds and a little salt. Serve immediately.

  • Takenoko Rice (Bamboo shoot rice) - Spring. PIXTA. For the spring taste, this mixed-rice with bamboo shoots is one of the best choices. You can also add in a pot the ingredients of your choice like carrots and cook everything together.
  • Nanohana Rice (Rape blossom rice) - Spring. PIXTA. The rape blossom, named after "rapus", the Old English word for turnip, is a kind of turnip flower harvested a lot during spring in Japan.
  • Soramame Rice (Fava beans rice) - Spring. PIXTA. Not only is the appearance of the soramame rice with its white rice and vivid green color similar to Nanohana rice, but so is its preparation: likewise, please avoid putting everything in the same pot when cooking.
  • Ume rice (Japanese plum rice) - Summer. PIXTA. Japanese plums are often eaten during summer in Japan, as a counter-measure against summer heat or heat stroke.
  • Shirasu rice (Young sardines rice) - Summer. PIXTA. The most common forms of the shirasu rice are probably well cooked rice mixed with a combination of shirasu and Japanese plums or shirasu and vegetable leaves.
  • Mushroom rice - Autumn. PIXTA. When autumn arrives in Japan, it is finally time to pick some mushrooms and, of course, cook mushroom mixed-rice. Some might boil the rice together with the mushrooms in the same pan, however you can eventually prepare in advance the mushrooms and add them afterwards when the rice is ready.
  • Aki-shake rice (Autumn salmon rice) - Autumn. PIXTA. The aki-shake, also called aki-sake, is the name given to the salmon during autumn as they put on fat when the weather becomes colder.
  • Kuri rice (Japanese chestnuts rice) - Autumn. Kanako .A/Flickr. Since autumn is its harvest season, Japanese chestnut is also considered to be one of the flavors of autumn in Japan.
  • Ginger rice - Winter. PIXTA. Ginger is a food rumored to make the whole body feel warm. As a result, Japanese people love to cook ginger, rice and their favorites ingredients together during the cold period of winter to warm themselves.
  • Oyster rice - Winter. PIXTA. To enjoy the flavor of winter, how about some oysters? Unlike the two preceding recipes, they should not be boiled together with the rice, but rather prepared beforehand using seasonings before stirring them with some already-cooked rice.
