SOUTHWESTERN BACKYARD BURGERS
Whether you're in the stadium parking lot or on your patio, these Southwestern-style burgers are great on the grill. Sometimes I make six patties rather than eight because I like my burgers bigger and better! -Robert Hodges, San Diego, California

- In a large bowl, combine the first eight ingredients. Crumble beef and sausage over mixture and mix well. Shape into eight patties. , Grill, covered, over medium heat for 5-7 minutes on each side or until no longer pink. Top with cheese. Grill 1 minute longer or until cheese is melted. , Grill buns, cut side down, for 1-2 minutes or until toasted. Serve burgers on buns with lettuce, tomato and toppings.

These zesty burgers are bursting with flavor. Taco seasoning, peppers, and pepperjack cheese give ground beef a boost. Then the patties are served up on buns with sour cream and salsa. A fun twist on barbecued burgers!

- Preheat grill for high heat.
- In a large bowl, mix together the ground beef, taco seasoning mix, bell pepper and onion using your hands. Form into 6 patties.
- Lightly oil the grill grate. Cook burger patties for 5 minutes per side, or until well done. Place buns cut side down onto the grill to toast during the last minute or so. Top each burger with a slice of cheese before removing from the grill. Serve burgers on toasted buns topped with salsa and sour cream.

SOUTHWEST TURKEY BURGERS

- Chop your garlic and veggies.
- Cook bacon in a large nonstick skillet over medium high heat until crisp. Wipe excess grease from pan and return skillet to heat.
- While bacon cooks, combine turkey meat, garlic, shallot or onion, thyme, cilantro or parsley, bell pepper, serrano or jalapeno pepper, cumin, hot pepper sauce, grill seasoning or salt and pepper. Divide mixture into 4 equal mounds then form meat into patties. Drizzle patties with vegetable oil to coat. Cook in skillet over medium high heat for 5 to 6 minutes on each side. Place sliced cheese over the patties in the last 2 minutes of cooking, use 1 or 2 slices for each patty, as you like.
- Pile cooked cheeseburgers into buns. Spread sweet relish or jelly on bun tops and set red leaf lettuce into place, using the relish or jelly as glue. Top cheeseburgers with 2 slices of cooked, crisp bacon or turkey bacon and lettluce. Then serve with tortilla chips, tossed salad and/or spicy o-nuts.
SOUTHWEST TURKEY BURGERS
Most of the turkey burgers that I have had were overcooked and flavorless. This recipe was inspired by some friends of ours that put a Southwest spin on the burger. With a few tweaks these Southwest turkey burgers have become a staple recipe in our house. The patty is flavorful and plays well with some creamy guacamole and spicy salsa.

- Combine turkey, eggs, onion, bread crumbs, 2 tablespoons oil, jalapenos, Worcestershire, mustard, paprika, chili powder, and cumin in a bowl. Form into 8 patties. Season lightly with salt and pepper.
- Heat remaining olive oil in a saute pan over medium to medium-high heat. Place patties in the hot pan and cover partially to help retain moisture, but not so much that the patties braise (boil). Cook until browned and halfway cooked through, about 4 minutes. Continue to cook until no longer pink and an instant-read thermometer inserted into the center reads 165 degrees F (74 degrees C), about 3 minutes more.
- Serve patties on toasted buns with guacamole and salsa.

- Mix all ingredients. Shape mixture into 6 patties, each about 1/2 inch thick.
- Set oven control to broil.
- Place patties on rack in broiler pan. Broil with tops 3 to 4 inches from heat 10 to 12 minutes for medium, turning once, until no longer pink in center and juice is clear.

- Prepare the Avocado Salsa: Combine the tomatoes, red onion, jalapeno, lime juice, and salt. Gently stir in avocado chunks and cilantro. Set aside while you prepare the burgers.
- Prepare the Southwest Burgers: In a large bowl, combine the ground beef, jalapeno hot sauce, cumin, oregano, garlic powder, coriander, chili powder, and sweet paprika. Mix gently with your hands—but do not over mix. Form the ground beef mixture into 6-ounce burger patties (roughly ¾-inch thick). Heat a large cast iron grill pan (over medium-high heat, and grease lightly with cooking spray. Cook the burgers on each side until charred, roughly 4-5 minutes per side (or until the internal temperature reaches roughly 150 degrees Fahrenheit). Top each burger with 1 ounce of pepper jack cheese, tent pan with foil (or close grill top), and cook until the cheese has just melted. Remove and allow the burgers for rest for several minutes. - To Assemble: Place burgers on toasted buns, and add a large spoonful of avocado salsa. Serve immediately.

- In a medium non-stick sauté pan, heat oil over medium high heat and add peppers and onions and sauté for about five minutes or until they start to soften up and brown slightly.
- Remove four peppers from the can of chipotle peppers in adobo and chop then add to the cooking peppers and onions.
- Sauté over medium heat until the vegetables are tender. As it finishes cooking, the mixture may stick a bit so add a little water and scrape the pan with a wooden spoon until finished cooking. Set aside.
- In a small bowl mix mayonnaise with 2 tablespoons of the cilantro and one teaspoon of the adobo sauce from the can.
