CLASSIC FISH AND CHIPS
Steps:
- Place potatoes in a medium-size bowl of cold water. In a separate medium-size mixing bowl, mix together flour, baking powder, salt, and pepper. Stir in the milk and egg; stir until the mixture is smooth. Let mixture stand for 20 minutes.
- Preheat the oil in a large pot or electric skillet to 350 degrees F (175 degrees C).
- Fry the potatoes in the hot oil until they are tender. Drain them on paper towels.
- Dredge the fish in the batter, one piece at a time, and place them in the hot oil. Fry until the fish is golden brown. If necessary, increase the heat to maintain the 350 degrees F (175 degrees C) temperature. Drain well on paper towels.
- Fry the potatoes again for 1 to 2 minutes for added crispness.

- Spiced-Tomato-Braised Fish. When cooked with lots of warm spices such as cumin and garam masala, store-bought tomato purée packs tons of flavor into a simple, cozy (but quick) braise.
- Green Seasoning Baked Cod. For this baked cod recipe, you'll make Green Seasoning, a Trinidadian blend of herbs and aromatics, that perfumes the flaky fish with herbaceous flavor.
- Brothy Coconut-Mustard Fish. This recipe is inspired by the flavors of Bengali ilish bhapa: Canned coconut milk + bottled mustard = an exquisitely simple sauce for any flaky white fish.
- Cod With Soy-Caramelized Onions and Potatoes. Adding ginger and soy sauce to caramelized onions gives a bit of zingy punch and intrigue, creating a multidimensional meal that comes together in just one skillet.
- Soy and Ginger Steamed Fish. You can use this foolproof steaming method to cook any sturdy fish. The kombu, though optional, adds a subtle layer of umami to the delicate broth, which comes together in less than 15 minutes.

- In a small bowl, combine the smoked paprika, garlic powder, onion powder, celery seed, and kosher salt. Pat the cod dry and sprinkle all sides with the seasoning.
- Heat a large skillet over medium high heat and add the butter and olive oil. When butter is melted, add the cod and cook for 2 minutes.
- Flip the cod and pour the lemon juice over the fish. Cook an additional 1 to 2 minutes until the cod is tender and starts to flake when you prick it with a fork (adjust based on the thickness of the fillets). Remove from the heat and sprinkle with the parsley. Serve immediately.
