PAN-SEARED TILAPIA
Steps:
- Rinse tilapia fillets in cold water and pat dry with paper towels. Season both sides of each fillet with salt and pepper. Place the flour in a shallow dish; gently press each fillet into the flour to coat and shake off the excess flour.
- Heat the olive oil in a skillet over medium-high heat; cook the tilapia in the hot oil until the fish flakes easily with a fork, about 4 minutes per side. Brush the melted butter onto the tilapia in the last minute before removing from the skillet. Serve immediately.

CAJUN TILAPIA WITH SOUTHWESTERN SALSA
Steps:
- Preheat an outdoor grill for high heat and lightly oil the grate.
- Place corn on the preheated grill and cook, turning often, until charred all over, about 10 minutes. Transfer to a plate and remove kernels when cool enough to handle.
- Combine corn kernels, avocado, tomato, black beans, red onion, cilantro, and jalapeno in a large bowl. Squeeze 1 lime wedge over top and season with salt and pepper. Store in the refrigerator until cold, about 30 minutes.
- Meanwhile, season tilapia on both sides with Cajun seasoning.
- Melt butter in a medium stainless steel skillet over medium-high heat; cook until just before butter begins to brown. Add tilapia and cook for 1 to 2 minutes. Flip and cook for 1 more minute. Tilt the skillet and baste with the butter until fish is cooked through and flakes easily with a fork, about 5 more minutes. Remove fish from the skillet.
- Pour chicken broth into the pan and scrape the browned bits of food off the bottom of the pan with a wooden spoon. Whisk in cream. Squeeze in another lime wedge, then taste and adjust for your desired level of tanginess. Bring to a simmer, then remove from the heat.
- Serve fish with cold salsa, adding cream sauce to both, if desired.

Broil 6 to 8 minutes or until fish flakes easily when tested with a fork. Meanwhile, melt 1 tablespoon butter in a large nonstick skillet over medium heat. Add onion; cook 4 minutes or until tender, stirring constantly. Stir in chili powder and cumin; cook 30 seconds, stirring constantly. Remove from heat; stir in 2 tablespoons butter, water, and lime juice until well blended. Spoon onion mixture evenly over fish.

This recipe is NOT spicy & wasn't meant to be spicy. Taliapa is a sweet white, mild tasting fish. If you want spicy add spices to this recipe.

- Set a large deep skillet (or sauté pan) over medium heat. Place the breadcrumbs, cumin, chili powder, 1 1/2 teaspoons salt, and 1/2 teaspoon black pepper in a shallow dish. Mix by hand, then press the tilapia fillets in the breadcrumbs. Be sure to coat the fish well on all sides. Once the pan is hot, add 1 tablespoon butter, and 1 tablespoon oil.
- Lay the breaded tilapia fillets in the skillet. Cook for 4-5 minutes per side, until golden brown. Press the thickest part of the tilapia fillet. If it seems dense and springs back when you press it, it's done. Remove the fish from the pan and set aside.
- Use a paper towel and spatula to wipe the black crumbs out of the pan. Add the remaining butter and oil. Once melted, add the onions to the skillet.
- Sauté the onions for 2 minutes, then add in the red bell peppers. Stir and sauté another 2 minutes. Pour in the black beans, corn, and chopped mango. Stir and sauté until the corn is warmed through. Then add the chopped cilantro and lime juice. Taste, then salt and pepper as needed.
