EASY SOY SAUCE MARINATED CHICKEN
This is a very simple marinade with two hours of fridge time before cooking. Excellent in pocket bread or over rice.

Steps:
- Cut chicken breast into 1 inch pieces combine soy sauce, sherry, cornstarch, garlic and sugar.
- Put chicken pieces into the mixture and refrigerate for an hour or two.
- When ready cook peppers and mushrooms in 1 tablespoon oil.
- Remove from skillet and cook chicken pieces in 3 tablespoon oil.
- When the chicken is cooked, add water to it and stir to thicken.
- Return vegetables to the chicken in skillet and serve in Pita pockets or with rice.
STEAMED SOY-MARINATED CHICKEN
Steps:
- Into a large, re-sealable plastic bag add the soy sauce, sesame oil, peanut oil, lime juice, ginger, garlic, and cilantro. Seal the bag and shake it to mix the ingredients. Add the chicken breasts and shake it again. Let the chicken marinate in the refrigerator for at least 1/2 hour or up to overnight.
- Pour about 1-inch of water into a wok and bring it to a boil over high heat. Line the bottom of a bamboo steamer with a layer of cabbage leaves. Place the marinated chicken on top of the leaves. Cover the steamer and put it into the wok. Steam the chicken until it is cooked through, about 10 to 15 minutes.

Steps:
- In a small bowl, combine all the ingredients and mix well. Transfer to a tightly sealed jar and store in the refrigerator for up to 3 weeks.

Steps:
- Cut chicken breasts diagonally and place in a single layer in the bottom of an oven-proof dish.
- Pour in soy sauce. Squeeze the juice from half the orange onto the chicken. Cut the other half of the orange into wedges and arrange on top of the chicken.
- Cover and marinate for several hours.
- Preheat the oven to 350°F When oven is heated, remove cover from chicken, flip chicken, and bake 20 minutes (uncovered). Flip again and bake another 15 minutes.
- Meanwhile, trim woody ends from asparagus. Heat a little oil or butter in a heavy skillet. Saute the asparagus, adding the white pepper and lemon juice a little at a time to glaze the asparagus. Cook until desired texture is reached. This will probably not take more than 10 minutes.
- Serve chicken and orange wedges on top of asparagus.

SOY-MARINATED CHICKEN THIGHS
This is a quick and easy grill recipe from the July 2008 Cooking Light. I thought it would be posted here somewhere but I just don't see it. This is such a yummy and easy recipe...perfect for a lazy summer evening. Prep time includes marinating time.

Steps:
- Combine the first 5 ingredients in a ziploc bag and seal. Marinate in the refrigerator for 4-24 hours.
- Prepare grill to medium high heat.
- Place chicken on sprayed grill rack and discard marinade.
- Grill 3 minutes on each side until done. This took me about 15 minutes.

GRILLED CHICKEN MARINADE
Simply the best chicken marinade for any occasion. Works wonderfully on top of a salad.

Steps:
- Whisk vinegar, soy sauce, olive oil, parsley, basil, oregano, garlic powder, and black pepper together in a bowl and pour into a resealable plastic bag. Add chicken, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator, at least 4 hours.
- Preheat grill for medium-low heat and lightly oil the grate. Drain and discard marinade.
- Grill chicken on the preheated grill until no longer pink in the center, 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
