SPAGHETTI WITH RED CLAM SAUCE

Steps:
- Drain the clams reserving 1/2 cup of their juice and set aside. Heat the olive oil in a large skillet over medium-low heat. Add the garlic and cook until softened, but not browned, about 3 minutes. Add the pepper flakes and cook for 30 seconds more. Add the reserved clam juice and tomatoes, increase the heat and bring to a boil. Cover, and lower the heat to maintain a gentle simmer, cook for 15 minutes. Set aside. Bring a large pot of water to a boil over high heat, salt generously. Cook the pasta until al dente, tender yet still slightly firm. During the last 5 minutes of cooking the pasta stir the clams, basil, and parsley into the sauce. Bring to a simmer and season with salt and pepper to taste. Drain the pasta and add to the sauce and toss to combine evenly. Divide among warmed bowls and serve.

Steps:
- In a large pot, bring to a boil 6 quarts of salted water. Add pasta, stirring constantly in the beginning to prevent it from sticking together. Cook until al dente, about 8 minutes.
- Meanwhile, heat the olive oil in a large saute pan. When almost smoking, add shallots and garlic and saute until soft and translucent, about 3 to 4 minutes, being careful not to burn the garlic. Add the clams and wine. Cover and simmer for 6 to 8 minutes or until most clams have opened.
- Add 2 tablespoons chopped parsley. Whisk in butter to thicken sauce slightly.
- Drain pasta in a colander. Do not rinse pasta with water - this will remove the pasta's natural starches. Place pasta into the clam saute pan and mix thoroughly. Check seasoning.
- Pour pasta into large serving bowl. Zest lemon over the dish, being carefull not to zest the white part of the lemon, which is bitter. Garnish with remaining parsley. Serve immediately.
SPAGHETTI WITH CHERRYSTONE CLAM SAUCE - SPAGHETTI MARE D'ESTATE
Steps:
- In a pan large enough to contain the clams saute in 2 tablespoons of the olive oil 1 garlic clove until golden. Add the clams and white wine, raise the heat, cover the pan, and cook about 3 minutes or until the clam shells are open, stirring a couple of times. Remove the pan from the heat, and let cool. Mince together the onion, basil, and remaining garlic clove,red pepper flakes and place in the remaining olive oil in a saute pan over medium heat. Saute until barely golden and limp. Add the canned tomatoes or if using fresh tomatoes wash, and pass them through food mill directly into the saute pan. Add salt to taste (recipe 1 tsp.) and a generous sprinkling of pepper. stir, bring to a boil, then simmer for 10 to 15 minutes, stirring occasionally. Remove the clams from their shells, directly over the pan they were cooked in, to conserve all the natural juices. Set aside the clams, and strain the juices with the first garlic clove into a cup. Add 1/2 cup of the clalm juice to the tomato sauce. Add the clams, and cook another 5 minutes. Cook the spaghetti in boiling water salted with 4 teapsoons salt (recipe 5 tsp). When the pasta is al dente, drain thoroughly and place in a serving sish. Dress with the sauce, and sprinkle with the minced parsley. Toss and serve.

Steps:
- Start water to boil for pasta.
- Heat 2 tablespoons oil over medium high heat in a small or medium saucepan.
- Add garlic and saute until softened, a few minutes. Add mushrooms (if using), clams, and juice from one of the cans of clams. Turn heat to high.
- Add red pepper flakes, Italian seasoning, oregano, wine, and lemon juice. Let simmer on high until at least three fourths of liquid has evaporated, about 10-15 minutes.
- Meanwhile, cook pasta until it is al dente.
- Drain pasta. Add pasta back to empty pot (off heat) and coat with 1/2 tablespoon of oil.
- Take sauce off heat. Add black pepper to taste, and parsley.
- Immediately add half of the sauce to the pasta and toss.
- Plate pasta, top with other half of sauce, and serve.

Here is a simple, elegant take on pasta with clam sauce that serves as a beautiful, light dinner with salad, perfect in advance of a movie night or reading session on the couch with family or friends. The key to its success is using less pasta that you generally might, which helps place the focus of the dish squarely on the meaty clams.

- Steam the clams in a covered pot (a glass top is very nice, voyeuristically speaking). You don't need any liquid other than what the clams will release. Meanwhile, bring a large pot of water to a boil and salt it.
- After the clams open - it could take as little as 10 minutes - uncover and cool. Take the meat out and strain and reserve the liquid; make sure to leave any sand behind. Chop the clams if they're big.
- Cook the pasta in the boiling salted water. Put 1/4 cup olive oil in a deep skillet over medium heat. When the oil is warm, add the red pepper flakes and garlic and cook for about 30 seconds. Add the clams and continue to cook, stirring, for about a minute. Add about 1/2 cup of the reserved clam liquid.
- Drain the pasta when it's nearly done and stir it into the clams. Cook, stirring, until the pasta is tender and the mixture is saucy. Add more clam-cooking liquid (or hot water or white wine), if necessary. Taste and adjust seasoning, adding a little more oil if you like. Garnish, and serve.

- Combine butter, garlic, onion and celery in a saucepan.
- Braise over medium-low heat until tender but not brown.
- Add the flour, and mix to make a roux.
- Drain clams, reserving juice.
- In a separate saucepan, combine clam juice, half-and-half, thyme and salt.
- Heat until just below boiling.
- Add to roux, and cook until sauce thickens.
- Add clams, stirring gently to mix through out the sauce.

- Bring a large pot of salted water to boil (use about one tablespoon of salt per two quarts of water—it should taste as salty as seawater). Add in the spaghetti and cook until al dente (about 2 minutes less than the time listed on the package). Reserve about 1 cup of the cooking water and set aside, then drain the pasta. Do not rinse.
- While the spaghetti cooks, heat the oil over medium heat in a large skillet. Add in the garlic and red pepper flakes, and sauté until just fragrant and tender, about 3 minutes.
