Spareribs With a Chili and Cream Sauce image

Steps:

  • Roast the ribs at 400°F for 30 minutes until well browned (I cut the ribs up).
  • Remove from the oven, lower the heat to 350°F.
  • Remove ribs from the tin, drain off all the fat, line the tin with parchment paper and replace the ribs in the roasting tin.
  • Mix together the seasoning mix, garlic, sugar, honey, hot sauce and the water, pour over the ribs.
  • Cook covered with foil for 40 minutes, uncover and cook for another 30/40 minutes until the ribs are tender and the sauce is reduced.
  • Put the ribs on a plate and the sauce in a small sauce pan.
  • To the sauce add two tablespoons cream and the tomato paste, bring to the boil.
  • Sample the sauce and add more hot sauce and maybe cream.
  • Drizzle the sauce over the ribs and serve.

1 crushed garlic clove
1 tablespoon dark brown sugar
2 tablespoons honey
1 teaspoon hot sauce
1 cup warm water
3 tablespoons heavy cream
1 tablespoon tomato paste

Chilli pork spare ribs image

Steps:

  • Heat the oil in a deep-fat fryer or large wok and deep-fry the spare ribs until they are brown and crisp. Do this in several batches, draining each cooked batch well on kitchen paper.
  • Combine all the sauce ingredients in a large pan and bring to the boil. Add the deep-fried spare ribs, cover and simmer for about 1 hr or until they are tender. Drain off the sauce and remove any remaining fat.
  • Heat oven to 180C/160C fan/gas 4. Put the spare ribs on a rack in a roasting tin and bake in the oven for 15-20 mins until they are brown, basting with the braising sauce every 5 mins.
  • Using a cleaver or a sharp, heavy knife, chop the spare ribs into 6cm-long pieces. Turn them onto a warm serving platter and serve immediately.

  • Preheat oven to 350 degrees F (175 degrees C). Spread pork ribs on a baking sheet; season with salt and pepper.
  • Bake in the preheated oven until lightly browned, about 30 minutes.
  • Whisk hoisin sauce, sugar, soy sauce, white wine, tomato paste, garlic, chili-garlic sauce, and five-spice powder together in a bowl.
  • Grease a slow cooker insert with cooking spray. Transfer pork ribs to the pot. Cover evenly with hoisin sauce mixture.
  • Cook on Low, stirring halfway through, until pork ribs are tender, about 8 hours.
