ROAST PORK TENDERLOIN IN THE NUWAVE OVEN
I have made this on the NuWave oven many times. It comes out excellent every time. It is fast , easy, and takes very little clean up. The best part is that it doesn't heat up the kitchen. If you have leftovers you can slice it thin when it's cold and it makes great sandwiches.

- 1. Trim the tenderloins and lightly brush with extra virgin olive oil.
- 2. Season all sides with salt, fresh ground black pepper, and Adobo powder.
- 3. Place on 3" rack in NuWave oven. Set the cook time for 12 minutes and start the oven. After the NuWave times out turn the tenderloins over and set it for another 12 minutes. When it times out again insert a meat thermometer. It should read about 145 deg. If not put it back on for another couple of minutes. When done let it rest for at least 15 minute.
- 4. After it has rested slice into 1/2" to 3/4" medallions and enjoy. If you like you can drizzle your favorite sauce or gravy over it. I find them to tasty and juicy without any sauce.

- In a small bowl, mix together chili powder, salt, ginger, thyme, and black pepper. Rub spice mix into pork tenderloins. Place meat in a baking dish, cover, and refrigerator for 2 to 3 hours.
- Preheat grill for medium heat.
- Brush oil onto grill grate, and arrange meat on grill. Cook for 30 minutes, or to desired doneness, turning to cook evenly.

- Pull Pork Loin from brine, pat dry with paper towel. Season Loin with 2 oz of Famous Dave's Rib Rub. Place in smoker or on grill with indirect heat and smoke at 250 degrees for 1 hour or until internal temp of 145 degrees. Pull from smoker and let rest for 10 - 15 minutes. Slice and serve

- Combine salt, garlic, white pepper, thyme and allspice in small bowl. Rub salt mixture into pork. Wrap pork tenderloin in plastic wrap and refrigerate 4 hours or overnight.
- Preheat oven to 325°F. heat oil in heavy large ovenproof skillet over medium-high heat. Add pork and cook until brown on all sides, turning occasionally, about 7 minutes. Place skillet with pork in oven and bake to desired doneness, about 30 minutes for medium. Transfer pork tenderloin to platter. Cover with foil and keep warm.
- Add milk and brandy to same skillet. Bring to boil over high heat. Continue boiling until liquid is reduced to 1/4 cup, scraping up any browned bits on bottom of pan, about 8 minutes. Slice pork and serve immediately with sauce.

FIVE-SPICES PORK TENDERLOIN

- In a small bowl, with a whisk, mix hoisin sauce, honey, ketchup, garlic and five-spice powder.
- Brush each tenderloin with about 1 tablespoon of the glaze (set aside remaining glaze).
- Put pork tenderloins on a grill in a broiler pan. Cook in a preheated oven at 375 F for 15 to 20 minutes or until the internal temperature reaches 160 F or pork tenderloins are cooked but lightly pink inside.
- Meanwhile, in a small saucepan, mix the reserved glaze and water. Cook at medium-low, stirring from time to time, for 10 minutes or until the sauce has lightly reduced.
- Remove the pork tenderloins from the oven and let rest 2 to 3 minutes.
- With a sharp knife, cut pork tenderloins in fine slices and distribute in 4 plates. Salt, pepper and spread with warm sauce. It's ready to serve.
