MOLASSES COOKIES
My Mom's recipe and one of my favorites. Spicy and chewy, they store well and can be frozen. Great for gift giving or shipping.

Steps:
- In a medium bowl, mix together the melted margarine, 1 cup sugar, and egg until smooth. Stir in the molasses. Combine the flour, baking soda, salt, cinnamon, cloves, and ginger; blend into the molasses mixture. Cover, and chill dough for 1 hour.
- Preheat oven to 375 degrees F (190 degrees C). Roll dough into walnut sized balls, and roll them in the remaining white sugar. Place cookies 2 inches apart onto ungreased baking sheets.
- Bake for 8 to 10 minutes in the preheated oven, until tops are cracked. Cool on wire racks.

Steps:
- Heat oven to 375°F. In large bowl, beat sugar, sour cream, butter, shortening, molasses and egg with electric mixer on medium speed, or mix with spoon. Stir in flour, baking soda, cinnamon, ginger and salt.
- Onto ungreased cookie sheets, drop dough by rounded tablespoonfuls about 2 inches apart.
- Bake 9 to 11 minutes or until almost no indentation remains when touched in center. Cool 1 to 2 minutes; remove from cookie sheets to cooling racks. Sprinkle with additional sugar while warm.

SOFT MOLASSES SPICE COOKIES
The description in the Robin Hood Cookbook where this recipe came from was that in 1880 a young man would take his sweetheart to the restaurant and offer her the usual treat: spruce beer and molasses hands - so called because handfulls of cookie dough were put on sheets to bake.

Steps:
- Combine flour, soda, salt and spices in a bowl and mix well to blend.
- Combine sugar, oil, molasses, milk and vanilla in a large bowl.
- Mix thoroughly.
- Add flour mixture gradually.
- Mix well.
- Chill 1 hour or until firm.
- Roll out portions of dough on lightly floured surface to 1/4-inch thickness.
- Cut with a floured 2 1/2" cookie cutter or your favourite shaped cookie cutters.
- Place on greased cookie sheet.
- Bake at 375° for 8-10 minutes.
- When cool store in tightly covered metal container.
- Prep time includes chilling time.

- Cream butter and sugar until fluffy.
- Add eggs and mix well Stir in vanilla.
- Dissolve baking soda into sour cream.

SPICED SOUR CREAM MOLASSES COOKIES
Another old recipe. These are large cookies with a warmth from the molasses and spices. They make wonderful gifts and the house smells AMAZING while they are baking. I double this recipe, so I have plenty for lunch boxes throughout the week and can give some away too.

- Pre-heat oven 180oC/350oF. Grease and line cookies sheets with baking paper. Sift the dry ingredients together in a bowl and set aside.
- Cream the butter and sugar together. Add the egg and beat again. Add the sour cream and molasses and beat again. Add the sifted flour and spices and mix well with a spoon.
- Drop dessert-spoonfuls of mixture onto the prepared cookie sheets, allowing spreading room. Bake in the prepared oven for 13-15 minutes. Allow to cool completely on the cookie trays before removing them to an airer.
