ITALIAN SAUSAGE AND BEEF STEW
My mom clipped this recipe from a magazine back in the 70's, and it has become a favorite. Perfect comfort food for a cool autumn or winter night, and tastes even better the next day!

Steps:
- Cut sausage into round slices, and stew beef into smaller, bite-size pieces.
- Brown sausage, then meat, in garlic.
- Saute onions in same pan.
- Put meats, onions, potatoes, pepper and kidney beans into Dutch oven. Sprinkle with salt, pepper, and a generous amount of basil. Stir to mix ingredients, and pour broth (or bouillion dissolved in 1 cup water) over all.
- Cook in a 350 degree oven for 1 hour.

- Cook sausage, pepper and celery in large saucepan on medium-high heat 8 to 10 minutes or until sausage is no longer pink, stirring frequently; drain.
- Add flour; cook and stir 1 minute. Stir in broth, tomatoes with their liquid and beans. Bring to boil; reduce heat to low. Cover; simmer 20 minutes, stirring occasionally.
- Serve with crackers.

Steps:
- Trim fat from meat.
- Cut meat into 3/4 inch cubes.
- Spray a large saucepan with veggie spray.
- Heat saucepan, add meat, onion and garlic, cook over medium high heat 'til meat is brown and onion is tender.
- Drain off fat.
- Stir in undrained tomatoes, broth, chili powder, cumin, basil and 2 cups water.
- Bring to boil, reduce heat, cover and simmer for 1 1/2 hours or'til meat is tender.
- Cut carrots into thin match like strips.
- Stir carrots and broccoli into meat mixture.
- Cover and simmer 8 to 10 minutes more or 'til tender crisp.
- Stir together cornstarch and 2 tablespoon cold water.
- Stir into stew, cook and stir until bubbly, cook and stir for 2 minutes more.

- Heat oil in a large, heavybottomed Dutch oven or casserole over medium-high heat. Cook sausage until browned, about 1 minute per side. Remove from pot and set aside.
- Dredge beef in seasoned flour, shaking off excess. Sear beef in the same pot until browned, about 2 to 3 minutes per side. Remove beef from pot; set aside.
- Add onions, garlic, celery, bay leaf, rosemary, and thyme to the same pot; sauté for 2 minutes. Add tomato paste and sauté for 2 minutes. Add tomato paste and sauté for 1 minute. Add 1 to 2 cups beef stock or enough to submerge meat. Return beef to pot and bring to a boil. Lower heat and simmer for 1 hour.
- Add sweet potatoes, carrots, and sausage; continue simmering for 15 minutes. Add squash then bring to a boil. Add zucchini, beans, and beef bouillon cube; simmer for 2 to 4 minutes. Season with salt and pepper. Add potato starch mixture if you want the sauce thicker, and simmer for 1 to 2 minutes. Sprinkle parsley on top.
