SPICY PORK STEW WITH HOMINY AND COLLARD GREENS
I've long adored hominy, the earthy dried corn kernels you find in pozole, the chile-laced Mexican stew. When I saw dried heirloom hominy for sale online, I bought some. I knew that having it in the cupboard when a hominy craving struck was the best insurance against cheating and buying the canned version. Like dried beans, dried hominy needs a good long soak and a lengthy cooking. But there's nothing difficult about the process. Many pozole recipes call for the finished stew to be garnished with shredded cabbage. But after bingeing on cabbage recently, I decided to take a different route, and stirred slivered collard greens into the pot at the end of cooking. They turned silky and soft and offered a nice contrast to the chewy hominy, the brawny pork and the spicy thick broth.

Steps:
- Soak the hominy in plenty of water overnight. Drain.
- Season the pork all over with 1 teaspoon salt and the black pepper. Heat the oil in a large pot over medium-high heat. Sear the meat in batches until well browned on all sides. Transfer to a plate.
- Add the onion to the pot and cook until soft, 5 to 7 minutes. Add the garlic, chile powder, cumin, oregano, bay leaf and cinnamon. Cook 1 minute. Return pork to pot. Stir in the chipotle, hominy, beer, 6 cups water and 2 teaspoons salt. Simmer, covered, for 1 hour. Uncover and simmer for about 1 to 1 1/2 hours more till meat and hominy are tender, adding water as needed if too thick. Stir in collards for last 20 minutes. Discard bay leaf and cinnamon. Taste and adjust seasonings. Ladle into bowls; garnish with lime, cilantro, avocado and radish.

OVEN PORK CHOPS WITH HOMINY
The original recipe was from cooks.com. Posted in response to a request in the forums. I rewrote the recipe to clarify the instructions. I would omit the salt as the soup and hominy should provide enough.

Steps:
- Place butter in large, oven-safe skillet and heat until melted. Add the chops and brown them quickly. Remove to a platter.
- Add the onion and green pepper to the skillet and saute until they start to brown.
- Blend together remaining ingredients in skillet with the drippings and veggies.
- Return the chops and any accumulated juices to the skillet, placing on top of the veggies mix.
- Bake covered at 350 degrees for 1 hour.
- Remove cover and bake 15 minutes longer.
PORK AND HOMINY STEW
This soup is a tradition in my family. We usually eat this wonderful spicy stew every Sunday afternoon after church. Warning, this soup can be really spicy, use caution when adding chile. Enjoy!

- Heat oil in a large skillet over medium heat; add diced pork, cumin, and salt and pepper to taste. Cook, stirring frequently, until evenly browned.
- Transfer pork to a large pot. Stir in hominy and 3 cups water. Cook over medium heat for 1 hour.
- While pork and hominy are cooking, place chiles in a small saucepan with 2 cups water. Boil for 45 minutes, covered. Drain, and remove stems. Place chiles in a blender with 1/4 cup water, onion, and garlic. Blend until smooth (you may still see seeds). Set aside.
- Serve pork and hominy soup in bowls, garnished with lime juice, cilantro, cabbage. For spicy soup, stir one teaspoon of chile into each bowl of soup.

- In a small bowl, combine the first eight ingredients; rub over both sides of pork chops. Cover and refrigerate 1-4 hours., Place a baking sheet in a 375° oven for 15 minutes. Meanwhile, in a shallow dish, beat egg and milk. In another shallow dish, combine cornflake crumbs, cheese and bread crumbs. Dip pork into the egg mixture, then into the crumb mixture., Remove the baking sheet from the oven and coat with cooking spray. Place chops on the sheet; bake for 15 minutes. Turn and bake for 10 additional minutes or until meat is no longer pink.

- In a small saucepan, combine the hominy and the cream. Simmer over moderate heat until the cream is slightly thickened, about 5 minutes. Remove from the heat.
- Heat the oil in a medium saucepan. Add the onion, green pepper and celery and cook over moderate heat, stirring, until the vegetables are softened, about 10 minutes. Add the garlic, tomatoes, jalapeño, oregano, thyme and bay leaf and simmer for 2 minutes. Stir in the chicken stock and vinegar and bring to a boil, then lower the heat and simmer for 15 minutes. Stir in the creamy hominy and bring just to a simmer. Discard the bay leaf, season with salt, black pepper and Tabasco and keep warm.
- Heat 1/4 inch of peanut oil in a heavy skillet. On a shallow plate, combine the flour, paprika, dried oregano, cayenne, 1 tablespoon of black pepper and 1 teaspoon of salt. Dredge the pork chops in the seasoned flour, shaking off the excess. Cook the chops over moderately high heat until well browned, about 3 minutes per side. Transfer to a plate and pour out the oil in the skillet.
- Add the white wine, bourbon and vinegar to the skillet and cook over moderately high heat for 3 minutes, scraping up any browned bits. Add the pork chops and bring to a simmer. Reduce the heat to low, cover and simmer gently until the pork chops are just cooked through, about 8 minutes longer. Transfer the chops to a plate. Boil the pan juices over high heat until reduced to 1 cup, about 5 minutes. Season with salt and pepper.
