SPICY INDIAN POTATOES
I got this recipe from manjulaskitchen.com. It was so delicious we just ate it without any bread or accompaniment. I didn't even have time to take a picture because it was all gone! Maybe next time. The actual recipe states to boil the potatoes first, but I just added them to the pan and let them cook in the pan with the other ingredients. I don't know if the version below is exactly the same as from the website, but it's how I made it.

Steps:
- 1) Peel and cut potatoes into small cubes.
- 2) Heat oil in pan.
- 3) Add cumin seeds, onion seeds, mustard seeds and asafoetida powder to pan and shake around until seeds start to crackle.
- 4) Add potatoes, turmeric powder, salt and green chilis. Mix well.
- 5) Lower heat to simmer and cover pan for about 18-20 minutes or until the potatoes are fork tender. You may want to add a splash of water at this step if it's too dry for the potatoes to get cooked well.
- 6) Increase heat to high and stir. I let the potatoes brown a bit but you can skip this step.
- 7) Remove from heat and stir in chopped cilantro and lemon juice.

POTATO GNOCCHI & SPICY MARINARA #SP5
Official Contest Entry: Simply Potatoes 5Fix. This is the perfect potato pasta dinner right at sunset. The spicy marinara is a great compliment to these fluffy potato gnocchi topped with grated parmesan. Server with buttered garlic bread and white wine.

Steps:
- Add 2 cups of mashed potatoes to a pre heated oven for 15 minutes.
- Remove the potatoes and press them through a ricer. Place potatoes on a large cutting board.
- On top of the potatoes, add the eggs, and flour and start to combine ingredients until you are able to form a ball. Add more flour so your hands will not stick.
- Cut the dough into 4 pieces, and roll each of them into 1 inch logs. Cut the logs down to 1/2 inch pieces.
- Roll each piece on the tip of a fork to create ridges in the dough. This makes it easier for the sauce to stick to the dough.
- Add each piece to a medium sized sauce pan of boiling water. They will float to the top when they are done. Approximately 7 minutes.
- In another medium sized sauce pan pour in the marinara and let it simmer on low heat. When the potato gnocchi has floated to the top, drain the excess water with a strainer and add to the marinara. Gently stir before serving. Top with grated parmesan cheese.

SPICY INDIAN POTATO WEDGES
I use red potatoes for this since I prefer the waxy taste, you can substitute for russet if you like a more floury texture. I serve these with my parmesan peppercorn dressing Recipe #274443. EDIT: If you prefer crunchy potatoes, you can increase the temperature to 400-450F half way through.

Steps:
- In a small bowl mix the salt and spices together.
- Cut the potatoes into wedges, about 12 wedges per potato.
- Rinse and dry the wedges and place in a baking tray.
- Spray the potatoes with cooking oil and sprinkle the spice mix evenly over the wedges.
- Bake at 350F for 40-50 minutes or until cooked.

- Freeze can (package) 10 minutes, cut into 12-2" squares. Whip eggs in small stainless steel bowl. Heat butter on low heat in 12" cast iron skillet. Spread breadcrumbs on flat surface.
- Dip crunchies in egg, coat with breadcrumbs all around, brown on all sides 2-3 minutes. Transfer into 13"x9" baking pan. Turn oven to 375.
- Bake additional 7 minutes. Serve 3 per person.

- In a large bowl, combine mashed sweet potatoes and pepper jack cheese. Mix well.
- Using wet hands, form into popper shape, like small footballs about 1.5 inches long. Wet hands often to reduce sticking.
- Dip poppers into beaten eggs, then roll in panko bread crumbs to coat. Place coated poppers on a large plate.
- Place poppers into the fridge to chill for 30 minutes.
- Heat oil in a deep, heavy pot over medium-high heat to 350 degrees F. Carefully drop poppers into the hot oil. Fry in batches until golden brown, about 3 to 4 minutes.

Steps:
- Follow package directions on the Simply Potatoes Diced Potatoes with Onion, except substitute butter in place of the vegetable oil called for.
- Add turmeric and cayenne after potatoes have been cooking for 10 minutes.
- Stir to mix the spices evenly into the potato mixture.
- Add spaghetti sauce at end of cooking time and mix in well to coat potatoes evenly.
- Cook for 2 more minutes.
- Serve.
