Spicy Jalapeno Chicken Sausage With Mango Pineapple Salsa Recipes
SWEET & SPICY MANGO PINEAPPLE SALSA
After purchasing this salsa, I figured out the ingredients and VOILA! YUM! Enjoy this twist on salsa.

Steps:
- Peel and cut mango into cubes, discard seed.
- Dice pineapple, saved juice.
- All other ingredients can be diced in the food processor. Careful not to over "pulse" to too fine a texture.
- Combine all ingredients and let sit for one hour or more before serving.
- Serve with tortilla chips.
- Notes:.
- Use more or less of your favorite ingredients.
- Sometimes the jalapenos are not very spicy, feel free to add hot sauce (Tobasco) to spice it up if desired.

Steps:
- Heat a 12 inch skillet with olive oil over high heat. Quickly saute the jalapeno sausage for 2 minutes, add the dry sherry and cook 2 more minutes. Toss in the mango and pineapple and saute for 2-3 minutes. Add the fresh salsa, edamame and black beans, continue to cook 2-3 minutes just to heat through.
- Mix the chopped cilantro with the rice. Spoon the sausage and mango and pineapple salsa over the rice and serve immediately.
