We have an apple-picking party every year. It's a bushel of fun, and I always look forward to cooking a batch of this easy applesauce seasoned with cinnamon, cloves and allspice. -Marian Platt, Sequim, Washington

Steps:

  • In a Dutch oven, combine all ingredients; bring to a boil. Reduce heat; simmer, covered, 25-35 minutes or until apples are tender, stirring occasionally. Remove from heat; mash apples to desired consistency. Serve warm or cold. Freeze option: Freeze cooled applesauce in freezer containers. To use, thaw in refrigerator overnight. Serve cold or heat through in a saucepan, stirring occasionally.

Adding spices at the end of this recipe helps them retain their flavor; they won't be absorbed into the sauce while cooking.

Steps:

  • Peel, core, and cut the apples into 1 1/2-inch pieces; place in a medium saucepan with sugar and 1/4 cup apple juice. Cook over medium-low heat, stirring, until apples are soft enough to mash, 50 to 60 minutes.
  • Add the remaining cup of apple juice, and continue to cook until the apples are very soft and break down, about 30 minutes. Using wooden spoon, stir to break large pieces. If applesauce gets too dry, add more juice, 1/4 cup at a time as needed. Remove saucepan from heat, and whisk apples until smooth. Stir in cinnamon, nutmeg, and cloves. Serve at room temperature.

2 1/2 pounds apples, a mixture of Red Delicious and Granny Smith (10-12)
2/3 cup sugar
1 1/4 cups apple juice

MARTHA'S PINK APPLESAUCE

Steps:

  • Combine apples, lemon juice, and 1 1/2 cups water in a large pot. Cover and bring to a boil over high heat, stirring occasionally. Reduce heat to medium, partially cover, and cook, stirring occasionally, until apples are completely soft, about 40 minutes.
  • Pass apples through a medium-mesh sieve or a food mill fitted with the fine disk to remove skins. Applesauce can be stored in refrigerator up to 1 week, or in freezer up to 3 months. To can applesauce, follow these instructions.

4 pounds McIntosh apples, quartered and cored
2 pounds red apples, such as Empire or Cortland, quartered and cored

  • In a wide, heavy-bottomed saucepan, combine all of the ingredients and cook over medium heat, stirring often with a wooden spoon to prevent scorching, for 25 to 30 minutes, until the apples are broken down. Break apart the large pieces with the back of the spoon. Season with pepper and serve.

  • In a large bowl, beat the applesauce, sugar, shortening and eggs. Combine the flour, cocoa, baking soda, salt, cinnamon, nutmeg, allspice and cloves; gradually beat into applesauce mixture until blended. Stir in the raisins, chocolate chips and walnuts. , Pour into a greased 13x9-in. baking pan. Combine topping ingredients and sprinkle over batter. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

Steps:

  • Peel the apples, reserving the peels of 6 of them.
  • Quarter and core the apples.
  • Combine all ingredients in a large saucepan; bring to a boil then reduce heat.
  • Simmer mixture until apples are soft and you can mash them down into applesauce, about 45 minutes to 1 hour.
  • Remove from heat and cool.
  • Remove peels from the applesauce and discard them.
  • Mash applesauce a bit more if you wish (I like mine a bit chunky), then refrigerate until ready to serve.
  • If you like, you can make extra applesauce and spoon into sterilized pint jars, seal and process in a boiling water bath for 15 minutes.

  • Quarter the apples, do not peel, and remove the seeds and cores. Place apples in a bowl, add the lemon juice, and toss thoroughly to coat.
