HONEY DIJON CHICKEN

I usually buy chicken breasts from those wholesale places. They are packed boneless, skinless and frozen. The other night I had no idea what to do for dinner and found a delightful recipe on the bag of chicken breasts. This recipe does not require that the chicken be defrosted, it requires minimal work and the chicken came out moist and juicy.

Honey Dijon Chicken image

Steps:

  • Preheat oven to 350 degrees.
  • Line a 13 x 9 inch baking pan with foil; spray the foil with non-stick cooking spray.
  • Rinse the frozen chicken pieces under lukewarm water to remove the ice glaze, pat dry.
  • Place chicken on prepared foil pan and sprinkle with paprika, top with lemon slices.
  • Place in the preheated oven and bake for 30 minutes.
  • Meanwhile, prepare the sauce by placing remaining ingredients in a small microwave safe bowl and mixing thoroughly.
  • Prior to spooning over chicken, microwave sauce for 1 to 2 minutes or until heated through.
  • After the breasts have baked for 30 minutes, drain and discard juices from baking pan.
  • Remove the lemon slices and spoon the heated sauce over the chicken.
  • Return to oven and continue baking for 1o to 15 minutes or until juices run clear when pierced with a fork.
  • Serve immediately.

2 frozen boneless skinless chicken breasts
1 teaspoon Hungarian paprika
4 thin lemon slices
1/4 cup honey
2 tablespoons Dijon mustard
1 teaspoon dried onion flakes
1 teaspoon lemon juice
1/2 teaspoon curry powder

  • Place chicken in an ungreased 11x7-in. baking dish. Combine remaining ingredients; pour over chicken. Bake, uncovered, at 350° for 35-40 minutes or until juices run clear, turning and basting with pan juices every 15 minutes.

  • Preheat oven to 350°. Place chicken in a greased 1-1/2-qt. baking dish. Combine 1 tablespoon each of honey and mustard; pour over chicken. Cover and bake until chicken is no longer pink, 20-25 minutes., In a large bowl, combine the lettuce, eggs, peppers, onion and sesame seeds; divide between 2 plates. Top with chicken. Combine remaining 1 tablespoon each honey and mustard; drizzle over chicken.

Steps:

  • Bring beans to a boil in salted water. Take off heat and drain.
  • Cut up chicken and fry in saucepan in 1 tbsp olive oil until cooked through. Season with curry, cardamom, and ginger, and stir fry for another minute.
  • Mix mayonnaise, honey and mustard together.
  • Grate cheese.
  • Preheat oven to 400°F.
  • On each wrap, lay out about 1/4 cup of chicken, 8 beans, 1 tbsp dressing, 1-2 tbsp cheese in a line down the middle. Leave space on the sides to fold. Fold in the two sides, fold the bottom up over the chicken etc, and wrap tightly. Place in large rectangular ovenware dish.
  • Bake for about 10 minutes, till starting to brown a little on the edges.
  • Serve hot.
  • Stores well in freezer, wrapped separately, after cooking. Great for lunches.
