TEX-MEX MEAT LOAF

This specially seasoned meat loaf tastes just like a taco. The recipe was given to me by a friend who was a terrific cook. I usually pair it with my best homemade corn bread. - Kathleen Lerum, Arlington, Texas

Steps:

  • In a large bowl, combine 1 cup of tomato sauce, chips, onion, green pepper and taco seasoning. Crumble beef over mixture and mix well. Pat into a greased 9x5-in. loaf pan. Bake, uncovered, at 350° for 1 hour or until the meat is no longer pink and a thermometer reads 160°; drain. Heat the remaining tomato sauce. Slice meat loaf; top with tomato sauce.

  • In a large bowl, combine the ground beef, eggs, diced tomatoes and green chile peppers, onion powder, ground black pepper, salt and bread. Mix together well, place in a 5x9 inch loaf pan and top with the cheese.
  • Bake at 350 degrees F (175 degrees C) for 1 hour.

Spicy Tex Mex Meatloaf image

Steps:

  • Preheat oven to 350°F In heavy skillet, saute onion, garlic, and jalapeno in olive oil until tender, about 5 minutes add bread crumbs.
  • In large bowl, combine eggs, salsa, chili powder, refried beans, black olives, salt, cayenne pepper, cilantro and sauteed vegetables. Mix well until thoroughly combined. Add ground beef, pork and cubed cheese and mix gently but thoroughly with hands.
  • Shape meat into a loaf and place on a pan. Bake at 350 degrees for 55-60 minutes, until internal temperatures registers 160°F Sprinkle meatloaf with shredded cheese and bake 5 minutes more until cheese melts. Place onto serving platter, cover with foil, and let stand 15 minutes before slicing.
  • Serve with additional salsa, sour cream, cheese and jalapenos!

Steps:

  • Preheat oven to 375.
  • In a small bowl mix ketchup, cumin, and chilli powder.
  • Set aside.
  • Next, mix beef, salt, oats, salsa, and eggs.
  • Place mixture in a large glass baking dish.
  • Form into a loaf.
  • Spread ketchup mixture on top of meatloaf.
  • Bake on middle rack for 45 minutes.
  • Remove from oven and place pepper rings on top.
  • Return to oven and cook for 15 minutes more.
  • Let rest for 5 minutes.
  • Makes great sandwiches.

2 lbs ground beef
4 eggs
1 tablespoon salt
3/4 cup quick oats
1 cup chunky salsa
3/4 cup ketchup
1/4 teaspoon cumin

SPICY BALTIMORE MEATLOAF

This is something I've been experimenting with for a while. I've finally perfected the recipe. It's slightly spicy, very savory, and very delicious. It reminds me of a spicier version of the meatloaf I grew up with. I've marked the spicy ingredients as optional, for those that want to try this recipe, but make it mild.

Spicy Baltimore Meatloaf image

Steps:

  • Preheat oven to 350 degrees.
  • Combine all ingredients except 1/4 cup of BBQ sauce and grated cheese in a large bowl.
  • Knead the meat mixture by hand until well combined (about five minutes).
  • Grease a baking pan (or use cooking spray).
  • Place meat in baking pan and form into a loaf shape.
  • Top meat with remaining BBQ sauce and grated cheese.
  • Bake meatloaf at 350 degrees for 45 minutes.
  • Once meatloaf is cooked (about 150 degrees internal temperature for medium, about 180 for well done), remove from oven and let rest for about ten minutes.
  • Slice into 3/4" thick slices and serve with BBQ sauce or ketchup.

fillisg says "I made this recipe up a few years ago. We were going to a family reunion and I was to take a meatloaf. I had bought the ingredients the day before, thinking I had meatloaf seasoning at home. When I started to make the meatloaf, I did not have the seasoning pack. I just threw a few things from the pantry together and called it Tex-Mex Meatloaf. It was a huge hit, several wanted the recipe and I have been requested to bring it several times since.   • Preheat oven to 350 degrees.
  • Mix all ingredients well.
  • In a loaf pan, place 2 -3 slices of bread (depending on size of pan, this catches all the grease). Place meat mixture into pan and form loaf. Bake until juices run clear. At this point, top with shredded cheese and jalapeno slices and return to oven until cheese is melted.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Thoroughly combine beef, tortilla chips, pepper Jack cheese, onion, and taco seasoning in a bowl.

  • Preheat oven to 350 degrees F (175 degrees C).
