MARINATED WATERMELON SALAD WITH SPICY CHIPOTLE-LIME VINAIGRETTE

This is one of those salads that the longer it sits, the better it gets. The heat from the chipotle chili powder is tamed by the juicy watermelon, sweet mango and crisp cucumber.

Marinated Watermelon Salad with Spicy Chipotle-Lime Vinaigrette image

Steps:

  • For the spicy chipotle-lime vinaigrette: Whisk together the honey, olive oil, vinegar, lime zest and juice and chipotle chile powder in a small bowl. Season with salt to taste.
  • For the watermelon salad: Combine the watermelon, red onion, mango and cucumber in a medium bowl.
  • Pour the vinaigrette over the mixture and toss to coat. Cover and refrigerate for 30 minutes or until ready to serve. Just before serving, add the mint and toss to combine.

2 tablespoons honey
2 tablespoons olive oil
1 tablespoon white wine vinegar
1 teaspoon lime zest plus 3 tablespoons lime juice
1/2 teaspoon chipotle chile powder

Steps:

  • Cut a hole in the top of the watermelon, wide and deep enough to insert a funnel.
  • Pour as much vodka through the funnel as can be absorbed (1/2 cup to 1 cup), remove the funnel and replace the watermelon plug, Let sit for 4 hours and again, pour is as much vodka as can be absorbed, Repeat the process until all the vodka has been absorbed, (eventually all the vodka WILL be absorbed).
  • Refrigerate and serve well chilled.
  • When it's time slice it up and enjoy.
  • NOTES: You can also use a food injector, this works well or you can cut a hole big enough to hold the neck of a fifth of vodka, allow it to sit 6-12 hours, 24 being better, serve with the bottle sticking out of the watermelon, You can experiment with liquors, I have heard rum works well too.

Grandma's Chilled Watermelon Salad image

Steps:

  • Combine gelatin and boiling water in a medium heatproof bowl. Stir until dissolved, about 2 minutes. Add cold water and mix well. Place in the refrigerator and chill until partially set, about 1 hour
  • Add watermelon, undrained pineapple, and 1 cup pecans to the gelatin and mix well. Spoon into a salad bowl. Place back in the refrigerator and chill until set, about 1 hour.
  • Place cream cheese in a medium bowl. Beat using an electric mixer on high speed until light and fluffy.
  • Add milk and sugar to cream cheese and continue beating until the mixture is smooth. Fold in whipped topping. Spread mixture over the gelatin and sprinkle remaining pecans on top. Chill until ready to serve.
