INDIAN SPINACH AND CHICKPEAS
Steps:
- Heat oil in a medium skillet over medium heat. Add onion and saute until translucent. Season with salt and pepper, to taste. Add garlic and cook for another minute. Add spices and cook until fragrant. Add yogurt, half-and-half, thawed spinach with its liquid, and drained chickpeas. Bring to a simmer over medium heat and cook until heated through.

- Melt butter in a large saucepan over medium heat; cook and stir onion and garlic until onion is softened, about 4 minutes. Add quinoa to onion mixture; cook and stir for about 1 minute more.
- Pour water over quinoa mixture; bring to a boil. Reduce heat to medium, cover saucepan, and simmer until quinoa is tender and water is absorbed, about 20 minutes.
- Stir spinach and lemon zest into quinoa mixture; season with salt and pepper.

SPINACH AND PEAS

- Prepare an ice water bath; set aside. Line a baking sheet with a cooling rack; set aside.
- Bring a large pot of water to a boil. Add a generous amount of salt and the peas. Cook until bright green, 3 to 4 minutes. Using a slotted spoon, transfer to ice water bath to stop the peas from cooking. Drain, shaking off excess liquid; set aside. Add the spinach to the boiling water and cook, just until wilted, about 1 minute. Drain, squeezing out excess moisture, and transfer to wire rack to dry.
- Heat the oil in a large skillet over high heat. Add the shallots and cook, stirring frequently, until translucent, but not brown, about 2 minutes. Stir in peas, and cook 1 minute. Add the spinach, tossing to combine, and heat through, 1 to 2 minutes more. Season with salt and pepper. Serve immediately.

- Wash the rice, then soak in enough cold water to cover for 15 mins. Meanwhile, heat the oil in a large pan with a lid, add the cumin seeds and cloves, then fry until fragrant. Stir in the onions, then reduce the heat and cook with the lid on for 10 mins, stirring occasionally or until soft. Add the chillies and bay leaves, then increase the heat and fry until the onions are golden.
- Drain the rice, then add it to the onions and spices, stirring to coat the grains with oil. Cover the rice with stock and bring to a simmer. Scatter the frozen peas on top, put the lid on, then cook on a very low heat for 12-15 mins - don't be tempted to remove the lid.
- Turn the heat off and leave, with the lid on, for another 5 mins. Lightly fluff up the rice with a fork before serving.

- Zest the lemon, set the zest aside, then squeeze the juice into a small bowl. Thaw the spinach in the microwave and then squeeze out the excess liquid.
- Mince the garlic and dice the onion. Sauté the onion and garlic in olive oil over medium heat in a deep skillet until the onion are soft and translucent (about 3-5 minutes).
- Add the smoked paprika, oregano, cumin, and dry rice to the skillet. Stir and cook over medium heat for about 2 minutes to toast the rice and spices. You should hear the rice popping and it should begin to look slightly translucent.
- Drain the chickpeas and add them to the skillet along with the spinach. Add about 2 Tbsp of the lemon juice and the vegetable broth to the skillet, then stir the ingredients to combine.

- Whisk 1¼ cups (156 g) all-purpose flour, ½ tsp. baking powder, and ½ tsp. Diamond Crystal or ¼ tsp. Morton kosher salt in a large bowl. Make a well in the center and add 1 large egg, 2 Tbsp.
- Place a rack in middle of oven; preheat to 400°. Rinse 1 cup basmati rice in a fine-mesh sieve under cold water until water runs clear; drain and transfer to a small bowl.
- Heat 2 Tbsp. extra-virgin olive oil and 2 Tbsp. chilled unsalted butter in a large Dutch oven or other heavy pot over medium-high. Cook 2 medium leeks, white and pale green parts only, thinly sliced, stirring occasionally, until softened and becoming browned and crisp in spots, 5–7 minutes.
- Remove pot from heat, uncover, and scatter spinach over rice. Cover pot with reserved kitchen towel, then with lid; let sit 5 minutes. Fluff rice gently with a fork and mix to distribute spinach.
- Roll out dough on a lightly floured surface to a 14" round. (Dough will be very thin but quite elastic and malleable.) Brush bottom and sides of a 9"-diameter cake pan with some melted unsalted butter.
- Spoon filling into pan and spread into an even layer. Tugging dough gently (a bit like stretching pizza dough), fold edges up and over filling, overlapping slightly in the center (it’s okay if dough doesn’t quite cover filling; no one will see the gap once the pie is turned out onto a plate).
- Cover pan with foil and crimp lightly around edges. Bake pie 20 minutes. Remove foil and continue to bake until crust is golden brown, 23–26 minutes more.
- Combine 1 garlic clove, finely grated, and 1 cup plain whole-milk Greek yogurt in a small bowl. Thin with water to a pourable consistency; season with salt.
