BAKED BBQ BABY BACK RIBS
If you're in the mood for a little virtual trip into summer, give this technique a try. This works with literally any dry rub and barbecue sauce combo.

Steps:
- Preheat oven to 250 degrees F (120 degrees C).
- Mix ancho chile powder, white sugar, brown sugar, salt, black pepper, cumin, dry mustard, cayenne pepper, and chipotle pepper in a small bowl until combined.
- Place ribs meat-side down on aluminum foil. Prick back of rib rack several times with a knife.
- Generously apply coating of dry rub to all sides of rib rack.
- With rib rack meat-side down, fold foil around it to create a tight seal. Transfer to sheet pan.
- Bake in preheated oven until tender and cooked through, about 2 hours. Remove and cool 15 minutes.
- Increase oven temperature to 350 degrees F (175 degrees C).
- Open foil, drain and discard any accumulated juices and fat. Brush barbeque sauce on all sides of rack.
- Place rack meat-side up and return to oven, leaving foil open. Bake for 10 minutes, remove from oven, and brush another layer of barbeque sauce on meat-side only. Repeat baking and brushing with sauce 4 more times, for a total of 50 minutes baking time.
- Cut rack into individual rib segments and serve with more barbeque sauce.

STAR'S BBQ RIBS
A friend shared this rib recipe with me. Baking the ribs first removes much of the fat and results in easier grilling. Measurements for seasonings are approximate...play with them to find the taste that suits you.

Steps:
- Heat oven to 250F.
- Wash ribs.
- Combine Seasoning Ingredients in a small bowl.
- Rub ribs with seasoning ingredients and place in roasting pan.
- Bake uncovered in an oven for 2-3 hours, or until most of the fat has cooked away from the ribs. (You may need to tent the ribs with foil in order to keep them from drying out.)
- Combine Sauce Ingredients in another bowl.
- Remove ribs from oven (and drain any grease from pan).
- Pour over (baked) ribs, turning to cover ribs completely.
- Cover ribs with foil and marinate in refrigerator for 30 minutes.
- Grill ribs on medium heat until brown, about 10-15 minutes.
- Baste with sauce as needed while grilling.

SIMPLE BBQ RIBS
Country-style ribs are cut from the loin, one of the leanest areas of pork. These ribs are seasoned, boiled until tender, then baked with your favorite barbeque sauce. That's it! Back to simplicity, back to the country life. Sigh.

- Place ribs in a large pot with enough water to cover. Season with garlic powder, black pepper and salt. Bring water to a boil, and cook ribs until tender.
- Preheat oven to 325 degrees F (165 degrees C).
- Remove ribs from pot, and place them in a 9x13 inch baking dish. Pour barbeque sauce over ribs. Cover dish with aluminum foil, and bake in the preheated oven for 1 to 1 1/2 hours, or until internal temperature of pork has reached 160 degrees F (70 degrees C).

BEST BARBECUE RIBS EVER

- Combine the brown sugar, chili powder, 1 tablespoon salt, 1 teaspoon black pepper, the oregano, cayenne, garlic powder and onion powder in a small bowl and rub the mixture on both sides of the ribs. Cover and refrigerate 1 hour or overnight.
- Preheat the oven to 250 degrees F. In a roasting pan, combine the broth and vinegar. Add the ribs to the pan. Cover with foil and tightly seal. Bake 2 hours. Remove the ribs from the pan and place them on a platter. Pour the liquid from the pan into a saucepan and bring to a boil. Lower the heat to a simmer and cook until reduced by half. Add the barbecue sauce.
- Preheat an outdoor grill to medium high. Put the ribs on the grill and cook about 5 minutes on each side, until browned and slightly charred. Cut the ribs between the bones and toss them in a large bowl with the sauce. Serve hot.

- Preheat oven to 300 degrees. Mix together 1/4 cup plus 1 tablespoon salt, 1 1/2 teaspoons pepper, the sugar, and chili powder. Rub seasoning evenly over both sides of ribs. Transfer ribs, bone side down and slightly overlapping, to 2 rimmed baking sheets. Cover tightly with parchment-lined foil, and bake until tender, 2 1/2 to 3 hours.
- Divide barbecue sauce in half; reserve 1 half for serving. Heat grill to medium-high. Brush grates with oil. Remove ribs from baking sheets, and grill, turning occasionally and brushing with barbecue sauce, until charred, 2 to 5 minutes. Cut between each rib to separate. Serve with remaining barbecue sauce.
