BEST BAKED FRENCH FRIES
The healthiest way to make fries is to bake them. It saves money and you can't beat the taste. I have been playing around with different ways to bake fries for some time now, and I feel this is the best recipe thus far. Baking time may vary depending on how thick you cut the fries. Enjoy!

Steps:
- Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil; spray with cooking spray.
- Place sliced potatoes in a colander; sprinkle sugar over potatoes. Set aside until liquid is released from potatoes, 20 to 30 minutes. Drain liquid and dry potatoes well.
- Mix potato slices, olive oil, garlic powder, salt, and black pepper in a resealable bag until evenly coated. Spread coated potato slices in a single layer, leaving space around each potato, on the prepared baking sheet.
- Bake in the preheated oven for 20 minutes; flip fries and continue baking until crisp and browned, about 20 more minutes.

The key to achieving perfectly crisp "fries" is heating your sheet pan in a 500-degree oven for a good 10 minutes. When you toss the potatoes onto the blisteringly hot pan, magic happens: The potatoes sear and develop a truly crunchy crust. In terms of seasoning, we keep it simple with just salt and pepper, but feel free to experiment with adding a bit of chili or garlic powder, smoked paprika or cayenne to the mix.

- Arrange one oven rack at the lowest point. Place a large rimmed baking sheet there and heat oven to 500 degrees.
- In a large bowl, toss together potatoes, the oil, salt, pepper and any additional seasonings. Carefully spread potatoes out on the preheated baking sheet and return to oven's lower rack. Roast until slightly golden and crispy, tossing after 15 minutes.
- Reduce oven temperature to 425 degrees and bake 10 to 15 minutes more.

- Preheat the oven to 400 degrees F. Cover a baking sheet with aluminum foil or parchment paper. Slice the potatoes into a french fry shape. Toss in a bowl with the olive oil to lightly coat. Arrange on the prepared baking sheet, so that the fries are spread evenly.
- Bake until golden brown, turning over halfway through, 25 to 30 minutes.

- Heat oven to 425 degrees. Cut potatoes lengthwise into thick slices, then into 1/2-inch-by-1/2-inch-thick strips. Place in a bowl of cold water until ready to use. Drain and dry well on paper towels.
- Toss potatoes with oil and spread out on a dark roasting pan or baking sheet. Scatter thyme over potatoes. Bake for 35 to 40 minutes, turning occasionally, until potatoes are brown and crisp on all sides.
- Remove from oven, discard thyme stems (the leaves will have fallen off), sprinkle with salt and pepper, and serve immediately.

- Preheat the oven to 425 degrees Fahrenheit. Evenly space the oven racks to ensure even cooking.
- (Watch this video or use a fry cutter.) Wash the potatoes, leaving the skins on. Slice off the ends of each potato, then slice off part of the side to make a base. Place the potato half cut side down and cut off a 3/8-inch slice, then lay the slice on its side and cut it into several long strips. Repeat until all potatoes have been cut into fries. - Clean potatoes well and cut into sticks. You can peel the potatoes if you want but honestly, the crispy skins are the best part! Aim for ¼ to ½ thick sticks or anywhere in between. The more uniform your french fries, the more evenly they'll bake.
- Place cut potatoes in a bowl filled with hot water. Doesn't need to be boiled or anything, just really hot tap water will work. Let sit for 15 to 30 minutes to remove some of the starch.
- Remove potatoes from water and drain well. Dry potatoes thoroughly. My favorite method is with a salad spinner and really absorbent towels. The more moisture you remove, the crispier your oven baked french fries will be. (The salad spinner also works great for quickly drying freshly rinsed herbs!)
