SAUSAGE-STUFFED FLANK STEAK
As part of a prize I won for a recipe contest, I received a slow cooker. I hadn't used one in years, so I didn't have any recipes on hand. This tasty beef was my first creation, and it was a hit with my family. -Julie Merriman, Seattle, Washington

Steps:
- In a small bowl, combine cherries and 1/4 cup wine; let stand 10 minutes. Meanwhile, cut steak into four serving-size pieces; flatten to 1/4-in. thickness. Sprinkle both sides with 1/2 teaspoon salt and 1/4 teaspoon pepper. , In a large skillet, saute onion in 1 tablespoon oil until tender. Add garlic; cook 1 minute longer. Transfer to a large bowl; stir in bread crumbs, olives, cheese, basil, cherry mixture and remaining salt and pepper. Crumble sausage over mixture and mix well., Spread 1/2 cup sausage mixture over each steak piece. Roll up jelly-roll style, starting with a long side; tie with kitchen string., In the same skillet, brown meat in remaining oil on all sides. Transfer to a greased 3-qt. slow cooker. Top with marinara sauce and remaining wine. Cook and cook on low for 6-8 hours or until beef is tender. Serve with pasta.

- In a large skillet, saute sausage in butter for 3-4 minutes or until lightly browned. Add the potatoes, onion and apple; saute 4-5 minutes longer or until apple is tender and potatoes are golden brown. Stir in the vinegar, sugar and caraway seeds., Bring to a boil. Reduce heat; simmer, uncovered, for 2-3 minutes or until heated through. Sprinkle with parsley.

- Remove steak from refrigerator and sprinkle with 2 teaspoons salt; let stand 45-60 minutes. , Preheat a cast-iron skillet over high heat until extremely hot, 4-5 minutes. Sprinkle remaining 1 teaspoon salt in bottom of skillet; pat beef dry with paper towels. Place steak in skillet and cook until easily moved, 1-2 minutes; flip, placing steak in a different section of the skillet. Cook 30 seconds and then begin moving steak, occasionally pressing slightly to ensure even contact with skillet., Continue turning and flipping until cooked to desired degree of doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), 1-2 minutes.

STEAK AND SAUSAGE SKILLET MIX
Steps:
- Heat skillet to medium heat. Add butter and vegetable oil. Meanwhile tenderize steak strip fillets then set aside.
- Slice yellow, red, and orange bell peppers into thin strips. Do the same with the onion and add to skillet, stir often. Add steak strips after seasoning with pepper, red pepper, and salt. Slice smoked sausage then add to mix in skillet. Stir often.
- Cook rice in separate pot (desirable amount). Continue cooking skillet mix for around 20 minutes or until meat is fully cooked. Put rice in a bowl and meat mix over the top and ENJOY!

HAWAIIAN SAUSAGE SKILLET
I made this up one day when I couldn't find a recipe anywhere with these ingredients. So I kind of threw it together on a whim. Sugar can be adjusted for sweetness, and if the sauce gets a bit thicker than desired I suggest adding a little chicken broth as it's thickening. Serve immediately over rice.
