Steak Stuffed Jalapenos Recipe - (5/5) image

Steps:

  • Spoon the cream cheese into the pepper. Add the uncooked steak to the pepper and wrap the bacon around the jalapeno trying not to overlap it. Secure with a toothpick if necessary. Add pepper to taste. Refrigerate at least 30 mins. Preheat grill or skillet to med heat. Rotate peppers to cook on all sides and cook until bacon is crisp. Serve hot or at room temperature.

8 jalapenos, washed, cut in half and insides scrapped clean
1/4 to 1/3 pound chuck eye steak, cut against the grain into 8 strips slightly smaller than the jalapeno
8 slices thin but bacon, cut in half
3 ounces cream cheese at room temperature, cut into 8 pieces
Ground black pepper to taste

  • Combine jalapenos, garlic, pepper, salt, lime juice and oregano in a blender. Blend until smooth.
  • Place steak in a shallow pan or large resealable plastic bag. Pour jalapeno marinade over the steak, and turn to coat. Cover pan or seal bag; marinate in the refrigerator 8 hours or overnight.
  • Preheat an outdoor grill for high heat, and lightly oil the grill grate.

  • Preheat oven to 400°. Cut jalapenos in half lengthwise; remove seeds and membranes. In a large saucepan, boil peppers in water for 5-10 minutes (the longer you boil the peppers, the milder they become). Stuffed Jalapenos With Ground Chuck Steak image

Steps:

  • Preheat oven to 350.
  • Cook ground chuck steak in pan on medium heat til just turning brown(most pink of meat is gone). While the meat is cooking slowly, make canoe shaped slots into the jalapenos. Clean out seeds and thin membrane. Cook into meat the garlic, cayenne pepper, peppercorn, white pepper, salt, oregano, parsley, and basil. The meat will be thoroughly cooked and mixed well with spices. Make sure all meat pieces are no bigger than BB's.
  • In small bowl place cream cheese and mix in the meat and spice mix. Place the mix into a ziploc bag, seal and make a slit in one corner. Use the bag to pipe the mix into the jalapenos.
  • Place one thin slice of cheese on each jalapeno.
  • Bake in a preheated oven at 350 for 15-20 minutes on baking sheet. Use parchment paper under the jalapenos.

Stuffed Mexican Flank Steak image

Steps:

  • Preheat the oven to 350 degrees.
  • Put the crumbled corn bread in a large mixing bowl and set aside.
  • Place the flank steak on a flat surface. Hold a long, sharp carving knife parallel to the surface and cut the steak lengthwise in half to make two long rectangles of equal thickness. This may be done by the butcher. Sprinkle the meat with salt and pepper.
  • Heat two tablespoons of the oil in a skillet and add half of the onions, half of the celery, half of the green peppers and half of the garlic. Cook, stirring, until the mixture is wilted. Let cool briefly. Add this to the corn bread. Add salt, pepper and the eggs.
  • Remove and discard the stems of the jalapeno peppers. Chop the peppers and add them to the bowl. Add the parsley and blend well with the fingers.
  • Spoon equal portions of the cornbread mixture onto each half of the meat. Carefully roll the meat jellyroll-style, starting at the narrower end of each portion of the meat. It will be almost impossible to enclose the filling without a portion of it falling out. This is a minor problem. Continue to roll and enclose each filling as neatly as possible. Tie the meat with string in several places to secure it.
  • Heat the remaining three tablespoons of oil in a skillet and add the stuffed meat rolls. Brown the meat as neatly as possible on all sides, turning it carefully. Once more, a portion of the filling will fall into the skillet, which is to be expected.
  • When the meat is browned, scatter the remaining onions, celery, green peppers and garlic around the rolls. Sprinkle the vegetables with the chili powder, cumin and oregano. Stir to blend and add the crushed tomatoes, broth, salt and pepper. Stir.
  • Bring to the boil, cover and place in the oven. Bake about one hour. Transfer the meat to a serving dish and remove the strings. Pour the sauce into a saucepan and skim off the excess fat. Bring to the boil.
  • Cut the meat into rounds and serve hot with the sauce. Serve with Mexican table sauce on the side, if desired.

Steps:

  • Heat oil in a skillet over medium heat. Add onion; cook and stir until soft, about 5 minutes. Add beef; cook, stirring to break into very small pieces, until browned, about 5 minutes. Drain any excess grease. Stir in 2 tablespoons water and taco seasoning; cook until water evaporates, about 5 minutes.
  • Let beef mixture cool completely, about 10 minutes. Stir in Chihuahua cheese.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Cut tops off jalapeno peppers and scoop out seeds and ribs. Stuff with beef mixture, using the thick end of a chopstick to pack in mixture. Stack upright against the edge of a casserole dish.
  • Bake in the preheated oven until jalapeno peppers are soft, about 45 minutes.
  • Refrigerate jalapeno peppers until stuffing firms up, 1 to 2 hours.
  • Combine 1/4 cup water, sugar, and yeast in a small bowl. Let stand until foamy, about 5 minutes.
  • Combine flour, 1 egg, milk, and butter in a large bowl. Pour in yeast mixture; mix until well combined. Turn dough onto a lightly floured surface and knead until mostly smooth but slightly sticky, about 5 minutes.

  • Preheat oven to 400°F (204°C). Line a large baking sheet with parchment paper (best for clean-up) or a silicone baking mat. Place a baking rack on top of the baking sheet. Set aside.
  • Using a handheld or stand mixer fitted with a paddle attachment, beat the cream cheese, cheddar cheese, garlic, and paprika together until combined. You could also do this by hand using a rubber spatula. Salt to taste – I add just a pinch. Spoon filling equally among all 24 jalapeño halves.
  • Wrap each stuffed jalapeño with a half slice of bacon and stick a toothpick through the center to assure the bacon stays in place. Place each on the baking rack and bake for 25-28 minutes or until the bacon is crisp to your liking. I like to turn the oven to broil for the last minute or two to get things extra crispy. Serve immediately. Cover leftovers and keep in the refrigerator for up to 4 days.
