PAN-FRIED CHIVE FLOWERS
This is a great side dish to meat or fish. It's very easy to make and a good way to use up all those purple flowers that chives make. Make sure when you pick them that the flowers are still young and tender.

Steps:
- Heat olive oil in a large skillet over medium-high heat. Add butter; heat until melted, about 30 seconds. Add chive flowers, garlic, and salt; cook and stir until soft and tender, 3 to 5 minutes. Grind black pepper over mixture before serving.

STIR-FRIED FLOWERING CHIVES
This is a very traditional and authentic tasting chinese side dish. Its my 5 year old sons favorite and I often cook this to accompany other asian influenced dishes. Flowering Chives can be found in the produce section at any good asian grocer however if you can't get flowering chives, you could substitute for regular chives.

- Wash and dry the chives, snap off ends about 2.5 cm (1 in) or so from the end of the stem, then cut the chives into finger-lengths. Heat the oil in a wok and quickly stir-fry the chives for a minute on medium-high heat. Add oyster sauce, water, cornflour and sugar mixed together, stir until boiling and thickened, and serve at once.

STIR-FRIED GARLIC CHIVES WITH CHILE

- Heat wok over high heat until a drop of water vaporizes instantly upon contact. Add oil, swirling to coat wok evenly, and heat until hot and just smoking. Add chives and red pepper flakes and stir-fry, letting chives rest on bottom and sides of wok several seconds between stirs, until chives are tender and slightly browned, 2 to 4 minutes. Stir in salt. Serve over rice.
FLOWERING CHIVES AND PORK SLIVERS RECIPE (韭菜花炒肉丝 | JIǔ CàI HUā CHǎO RòU Sī)
In spring, I make this easy dish at least twice a week. The crunchiness of the flowering chives combined with tender, lightly seasoned pork is irresistible.

- Mix together the cornstarch, 1 tsp. of the wine, soy sauce, and pinch of sugar in a medium bowl. Trim any excess fat or skin from the pork and slice it against the grain into short, thin pieces, 1 to 2 inches (2.5 to 5 cm) by ¼ inch (6 mm). Toss the pork with the marinade and let sit for at least 10 minutes but no more than 1 hour.
- Cut the chives into 1- to 2-inch (2.5- to 5-cm) segments. You should have about 4 cups. Set aside.
- Heat a well-seasoned wok over high until smoking. Reduce the heat to medium-high, then add the oil. Once the oil is shimmering, add the ginger and garlic and stir-fry until fragrant. Add the pork and stir-fry until just cooked, 2 to 3 minutes.
- Add the flowering chives, the remaining 2 tsp. of wine, 1½ tsp. sugar, and the salt and fry until aromatic, 1 to 2 minutes. Don't cook the chives for too long, or they lose their crispness!

- Crack the eggs into a large bowl, and add the sugar, salt, Shaoxing wine, white pepper, sesame oil and water. Beat the eggs for a good 30 seconds until you see a layer of small bubbles floating on the surface of the beaten eggs. Mix in the chives until combined. Now you are ready to cook.
- Heat a wok until it just starts to smoke, and then turn the heat down to medium low. Wait 10 seconds, and then add the oil. Coat the wok with oil using your spatula to swirl it around. The oil should be hot but not smoking when you add the egg mixture.
- Once you pour the eggs into the wok, flip and stir them slowly with a spatula, being careful not to let the eggs brown or firm up too much. Once the eggs are just cooked, they’re ready. Serve!
