I don't know how a recipe could be any easier than this, but plan ahead as this needs to chill overnight. The 5 min prep time of course doesn't include the chilling time. :-)

- Place a fine-mesh sieve over a medium bowl. In a medium saucepan, off heat, whisk together granulated sugar, cornstarch, salt, and vanilla beans and pod. Gradually whisk in milk until cornstarch has dissolved; whisk in yolks.
- Cook over medium, whisking constantly, until the first large bubble forms and sputters. Reduce heat to low; cook, whisking constantly, 1 minute. Remove from heat and stir in butter until melted; immediately pour through sieve into bowl. Cover with plastic wrap, pressing it directly onto surface to prevent skin from forming; let cool completely.
- Cut bananas crosswise into 1/4-inch slices. Combine cream and confectioners' sugar in a bowl; whisk until stiff peaks form.
- Spoon one-third of pudding into a large glass bowl. Layer half of cookies, slightly overlapping, followed by half of bananas and half of strawberries. Spread one-third of whipped cream over fruit. Repeat layering of pudding, cookies, fruit, and whipped cream. Gently spread with remaining pudding; top with remaining whipped cream. Refrigerate until set, at least 4 hours or, covered, up to overnight. Garnish with whole berries before serving.
BANANA DATE TOFU PUDDING
Keep in the fridge for hungry children to snack on, or put in healthy lunch boxes for a protein rich desert. This is a great recipe for people who don't like tofu. They can get friendly with it in a nonthreatening atmosphere. This pudding uses fruit as it's only sweetener. You will be surprised at just how sweet and delicious the combination of bananas and dates can be.

- Open up the tofu, and drain off the water. Peel the bananas and cut them into chunks.
- Cut the tofu into small cubes and place it in a blender.
- Add the corn oil, water or soy milk, banana chunks, dates, vanilla and salt.
- Process for 2 to 3 minutes, or until the mixture is smooth with small date flecks blended throughout.
- You may have to stop the blender, and scrape down the sides a few times during blending.
- Pour the pudding into 4 small 1/2-cup-sized, resealable plastic containers, or a big bowl and chill.

AVOCADO DESSERT - SRI LANKA
This recipe is being posted for ZWT II & my source is asianonlinerecipes.com. Since I have a special fondness for Tex-Mex fare, I'm no stranger to using avocado & this is amazingly simple. I must admit I've never made an avocado dessert & didn't even know you could. (Stated time does not include chilling time)

- Cut avocados in half lengthways. Remove seeds & reserve them. Scoop pulp from shells & mash smoothly w/a fork. Discard shells.
- Add sugar to taste & stir in the cream.
- Put in serving bowl, return seeds to the pulp, cover tightly w/plastic wrap & chill before serving. NOTE: The presence of the seeds in the puree is said to keep the avocado from discoloring, but the plastic wrap is always used as well.
- To Serve: If desired, extra whipped & sweetened cream can be piped over the top of the dessert. While many favor adding rum for flavor, the delicate avocado flavor may be allowed to stand alone -- or -- the mixture can be divided & served both ways.
- Personal Note: I would reserve the avocado shells & use them to serve this dessert.

Somehow the thot of a lettuce wrap w/stir-fried chicken & this sauce captured my imagination. This is so easy & fast to make & can be made well-ahead of planned use.

RASPBERRY TOFU PUDDING
This is a great & simple way to add tofu to your diet. Especially if you are on a restricted diet. A lot of the taste will depend on the jam you use. I have a very tart one which is slightly odd. The jam can have seeds, as most of them break down in the blending.

- Throw all your ingredients in the food processor (you might want to break up the tofu a bit) and blend till smooth.
- I found some tofu stuck around the edges so scraping that down to the bottom helps.
- When finished taste and add a bit of extra honey if needed.

- If the tofu seems a bit watery, squeeze it lightly in a non-terry cloth towel or several layers of paper towel.
