Steps:
- Oven to 350 degrees.
- Butter & flour 9-inch round cake pan.
- Beat butter and 1 cup of the sugar in a large bowl with an electric mixer on medium speed until light and fluffy, 3 to 4 minutes. Add yolks and egg, 1 at a time, beating well after each addition.
- Place fruit in an even layer over top of batter, and sprinkle evenly with sliced almonds and cinnamon (if using). Sprinkle top with large-grain sugar.
- Bake in preheated oven until browned and a wooden pick inserted in center comes out clean, 35 to 40 minutes.

- Preheat oven to 400 degrees.
- Spray a 9-by-9-inch-square pan with nonstick cooking spray.
- Combine flour, 1/2 cup sugar and baking powder.
- In large bowl whisk egg whites and milk. Stir in applesauce and lemon rind. Add flour mixture and stir to moisten dry ingredients. Do not overmix.
- Spoon batter into pan and top with strawberries.
- Mix remaining 1 1/2-2 teaspoons granulated sugar with brown sugar and cinnamon and sprinkle over strawberries. Bake about 30 minutes. Remove from oven and place on wire rack to cool. Serve warm or at room temperature.

- Pre-heat the oven to 375.
- THE BASE: Cut margarine or butter into dry ingredients until it looks like coarse crumbs. Add egg & milk mixture; stir till moist. Pat evenly on bottom and 1" up the sides of 9x9" pan.
- THE MIDDLE PART: Mix all the ingredients together and turn into crust lined pan.
- TOPPING: Cut together and sprinkle evenly over the rhubarb.
- Bake for 45 minutes; cool and serve with ice cream or whipped cream.

- Arrange sliced strawberries in an even layer over top of batter, and sprinkle evenly with sliced almonds. Sprinkle ground cinnamon and remaining 1 tablespoon sugar evenly over strawberries.
