STRAWBERRY SQUARES - SOUTH BEACH STYLE

Suitable for south beach diet phase 2. Cook time includes chill time. If you're one of the people who finds Splenda too sweet, you may want to reduce the amount used, or skip it. Note: "Kashi GOLEAN" is a brand of cereal which is a high fiber soy protein product, a serving has 1 gram fat, and 10 grams fibre. This is readily available in grocery stores here in Halifax, Nova Scotia and may be in your area as well. See www.kashi.com for details.

Strawberry Squares - South Beach Style image

Steps:

  • Preheat over to 350°F.
  • Spray a 8" by 8" (or 9" by 9") non-stick square pan lightly with cooking spray.
  • Mix the kashi, 2 teaspoons of splenda and sunflower oil and press evenly over the bottom of the pan.
  • Bake for 10 minutes then remove from oven and cool.
  • Mix the boiling water and the strawberry or raspberry Jello and stir until Jello is dissolved, put mixture in refrigerator until cool but not set.
  • Mix the jello mixture with the skim milk and add the vanilla pudding mix, beat until lump free then stir in the strawberries.
  • Pour the strawberry mixture over the cooled kashi crust, and spread to even out the strawberries.
  • Chill until well set, then if desired, spread ultra low fat cool whip evenly over the top.

1/4 cup sunflower oil or 1/4 cup safflower oil
1 (10 g) package sugar-free strawberry gelatin or 1 (10 g) package sugar-free raspberry gelatin
1 (30 g) package fat-free sugar-free vanilla pudding mix
1 cup boiling water
1 cup skim milk
2 cups fresh strawberries, sliced and lightly sweetened to taste with
Splenda sugar substitute, to taste
Cool Whip Free (optional)

Steps:

  • Coat a 4-cup mold with cooking spray.
  • In a small bowl, dissolve the gelatin in the boiling water. Add the strawberries and stir until the strawberries thaw. Chill for 30 minutes, or until thickened. Beat with an electric mixer on medium speed until frothy. Fold in the yogurt. Pour the mixture into the prepared mold and chill for 1 1/2 hours, or until firm.

Balsamic Strawberries with Ricotta Cream image

Steps:

  • Put the ricotta cheese, honey and vanilla extract into the small bowl of a food processor and process until smooth, about 1 minute. Transfer to a small bowl and refrigerate for at least 2 hours.
  • In a small saucepan combine the vinegar and sugar and bring to a boil. Simmer over medium heat for 2 minutes, stirring occasionally. Allow to cool completely.
  • In a medium bowl, toss the berries with the basil and the balsamic syrup.
  • Divide the cream among 4 cocktail glasses, top with the berry mixture and serve.
  • Excellent source of: Vitamin C, Manganese
  • Good source of: Protein, Vitamin K, Calcium, Phosphorus, Selenium

2 tablespoons honey

Steps:

  • Preheat the oven to 350°F
  • In a blender or spice grinder, grind whole almonds until finely ground. In a small bowl, combine ground almonds, cinnamon, and nutmeg. Add margarine and stir to combine.
  • Lightly coat an 8x8-inch baking dish with cooking spray. Place strawberries, blueberries, and sugar substitute in the dish; toss to combine. Dot with ground nut mixture (it will not cover entire surface) and then sprinkle with sliced almonds.
  • Bake for 35 minutes, or until topping is golden and fruit is hot. Divide fruit among 6 dessert bowls and top each serving with 1 tablespoon of ricotta.

South Beach Chocolate-Dipped Strawberries image

Steps:

  • Combine the chocolate and the whipping cream in a glass measuring cup or bowl. Microwave at medium power for 1 minute or until the chocolate melts, stirring after 30 seconds. Stir in the almond extract and cool slightly.
