YUM YUMS

I found this recipe in my mom's old recipe box, and thought it sounded interesting. This one wasn't dated, but many of the other recipes in the box are from the 1960s. The quantities are a little vague, but I think it should be fairly easy to figure out!

Steps:

  • Soak marshmallows in whipping cream overnight.
  • Roll marshmallows in graham cracker crumbs.

1 (16 ounce) package marshmallows (this is a guess)
1/2 pint whipping cream
graham cracker crumbs (rolled very fine)

Steps:

  • Cut each yum yum into four pieces and set aside in large bowl
  • Add milk, double cream and eggs to a different bowl and whisk until smooth.
  • Soak the yum yum pieces in the mixture.
  • Layer soaked yum yum pieces in a baking tin.
  • Cover first layer in strawberry jam.
  • Add second layer of yum yums.
  • Bake for 45 mins at 190°C/375°F
  • Serve and enjoy!

  • Preheat the oven to 350°. Crush the Lorna Doone cookies and reserve about 1/2 cup of the crumbs for the topping. Mix the cookie crumbs with the melted butter. Press them into the bottom of a 9x13-inch baking dish. Bake for 5 minutes and then cool completely.
  • In a large bowl, combine the softened cream cheese and powdered sugar. Mix until smooth. Add 1 container of the thawed whipped topping and fold to combine. Once thoroughly combined, spread the mixture over the cooled crust.
  • Drop dollops of the strawberry pie filling over the cream cheese layer and spread carefully. Top with the remaining container of whipped topping and sprinkle with the reserved crushed cookies. Refrigerate at least 2 hours before serving.
