SPANISH GREEN BEANS AND TOMATOES
A traditional Spanish side dish that I've served on holidays for many years. But it's a simple, tasty dish anytime!

Steps:
- Heat oil in a large saucepan over medium heat. Add garlic; cook and stir until fragrant, about 2 minutes. Reduce heat if garlic begins to brown. Add green beans, then continue to cook and stir until bright green but not quite tender, about 4 minutes.
- Mix in tomatoes, lemon juice and pine nuts, and season with chives, bay leaf, salt and pepper. Bring to a boil, stirring often. Reduce heat and simmer gently uncovered for 25 to 30 minutes. Remove and discard bay leaf before serving.

STRING BEANS AND TOMATOES

- In a medium skillet, saute the onions, bell peppers and garlic in the butter until tender. Add the ketchup, carrots, basil, and fresh and canned tomatoes, then cook for 10 to 15 minutes more. Add the string beans, season with salt and pepper and continue cooking until the vegetables are tender, taking care not to overcook the beans. Serve over rice or as a side dish.
ROASTED BEANS AND TOMATOES

- Heat the oven to 450 degrees F with an empty baking sheet on an upper rack.
- Coat beans and tomatoes with olive oil and season them with salt and pepper. Pour the beans and tomatoes on the hot baking sheet and roast 22 to 25 minutes until caramelized. Serve as a side.

- Place beans and water in a large saucepan. Cover, and bring to a boil. Set heat to low, and simmer until tender, about 10 minutes. Drain off water, and set aside.
- Melt butter in a skillet over medium heat. Stir in sugar, garlic salt, pepper and basil. Add tomatoes, and cook stirring gently just until soft. Pour the tomato mixture over the green beans, and toss gently to blend.

- Add the bacon and onion to a large skillet over medium heat. Cook, stirring, until the bacon is beginning to crisp and the onions are golden, 5 to 7 minutes.
- Increase the heat to medium high and add the green beans and tomato paste. Stir and allow to cook for a minute or two. Add the tomatoes, crushing them with your hands as you add them. Stir to combine. Season with salt, pepper and cayenne. Bring the mixture to a simmer and simmer until thickened and the beans are soft but still green, 5 to 7 minutes.

- Cut tips off the beans, and if necessary remove the strings. Cut beans into 2-inch lengths.
- Bring enough water to boil to cover beans when added. Add salt to taste, and the beans. Cook 5 minutes, or until tender; cooking time will depend on size. Drain thoroughly.
- Core tomatoes, and cut into half-inch cubes.
- Heat oil and butter in a skillet and add garlic. When garlic is cooked, but not brown, add tomatoes, salt, pepper and bay leaf. Cook, stirring, about 2 minutes. Add beans, stir to blend well and cook about 1 minute, until hot. Remove bay leaf and serve.

- Bring a pot of salted water to a boil and blanch the beans for 4 to 5 minutes. I used a strainer to hold the string beans so I could just drop them in and pull them out. While the beans are blanching in the boiling water, add some ice to a bowl and fill three quarters with water.
- When the beans are done blanching, remove from boiling water and immediately transfer to the bowl of ice water. This is called "shocking," and will stop the cooking process and retain the color of the beans. Once the beans are cool, drain and reserve.
- Heat a saute pan big enough to hold all the string beans. Add the oil and when hot, saute the garlic and tomatoes over medium heat for 2 minutes, being sure not to burn the garlic. If the garlic does start to burn, remove it from the heat immediately while keeping the garlic moving in the pan with a wooden spoon.
- Add the string beans and stir together with the tomatoes and garlic. You are just trying to warm up the beans and combine flavors.
