STUFFED BAKED TOMATOES
I make this baked stuffed tomatoes dish often-my family really likes it. Besides being flavorful, the tomatoes make a colorful, zesty addition to any dinner. -Edna Jackson, Kokomo, Indiana

Steps:
- Preheat oven to 350°. Cut a thin slice off the top of each tomato. Scoop out pulp, leaving a 1/2-in. shell. Invert shells onto paper towels to drain. Mix stuffing ingredients except parsley; spoon stuffing into tomatoes. Sprinkle with parsley. , Place tomatoes in a baking dish; cover with aluminum foil to prevent over-browning of stuffing. Bake until tomatoes are tender and stuffing is hot, about 30 minutes.

I originally got the idea for this recipe from http://www.internationalfood4u.com , but I changed it to fit the items I most often have and a method that I feel works better.

- 1. Preheat oven (or toaster oven) to 400 degrees F.
- 2. Cut tomatoes into thick slices, and place them on a foil-lined baking sheet.
- 4. Salt and pepper lightly, add basil (as much or little as you like) and cook tomatoes for 10 minutes, or until tender but not mushy.
- 5. Turn off oven. Top tomatoes with cheese and drizzle with olive oil. Allow to sit in hot oven just long enough for the cheese to melt.

MOZZARELLA-STUFFED TOMATOES

- Preheat oven to 375 degrees F.
- Cut the tops off the tomatoes and, using a spoon, hollow out the middle. In a medium bowl, combine the mozzarella, bread crumbs, parsley, garlic, oregano, and olive oil. Season to taste with salt and pepper. Place the stuffing in the tomatoes, taking care not to pack them too tight. Place on a baking sheet and transfer to the oven. Roast for 30 minutes.
MOZZARELLA STUFFED PORTOBELLOS

- Preheat oven to 425 degrees F.
- Toss the portabellas in the balsamic vinegar, 1/4 cup of olive oil, gray salt and pepper, to taste. Arrange the mushrooms on a baking sheet and roast in the oven for about 10 minutes. Remove from the oven and let cool to room temperature.
- While the mushrooms are cooling mix together the bread crumbs, Parmesan, herbs and the remaining 1/4 cup olive oil.
- Place 1 slice (2 if the mushrooms are large) of mozzarella in the cupped side of each mushroom. Distribute the bread and herb mixture evenly over the mushrooms and return to the oven to roast for 5 to 6 minutes or until the mozzarella is molten and the bread and herb topping a nice golden brown. Serve either hot or at room temperature and enjoy.
STUFFED BAKED BALSAMIC MOZZARELLA TOMATOES
Easy, Quick and oh so good. These can be made on the grill or in the oven. Fresh ingredients make this a great summer side dish. Now to make this easy ... a good store bought vinaigrette will work fine although you can you use your favorite, I just think a balsamic works better than just an Italian vinaigrette, but you can use want you want. Otherwise a little balsamic, olive oil, garlic, s/p and dijon mustard and you have the dressing. But either way, use what works best for you. This is an amazing side dish with anything. Great summer flavors. I did want to mention after one review, the use of FRESH mozzarella is key for this dish and a good quality beefsteak or something similar. And sometimes I do use fresh basil chopped to this but not always, but if I have it on hand I will add it. So I just added it to the recipe but it isn't necessary. Just if wanted. Optional. But the cheese is a must.

- Marinade -- Slice the mozarella into 12 slices and place in almost all the vinaigrette, just save a little (1/4 cup) for a drizzle on top of the tomatoes. Turn them over and coat well, cover with plastic wrap and let marinade at room temp for 1 hour.
- Tomatoes -- For the tomatoes, cut the stem area out and then make 3 cuts, top to bottom, but not all the way through just so you can stuff the cheese slices into the cuts of the tomato. Salt and pepper the tomato well including in the cut areas.
- Topping -- Mix the bread crumbs and parmesan with a little of the balsamic vinaigrette (just a tablespoon) to make a nice crumb topping.
- Putting the tomatoes together. Stuff the each of the tomato cuts with a slice of the mozarella 3 per tomato, then drizzle the remaining vinaigrette over the tomato. Top with the bread crumb mixture and either grill for about 15 minutes or bake on a cookie sheet lined with foil for about 20-25 minutes until the cheese is melted and the bread crumbs are golden brown.

- Whisk oil, 2 tablespoons vinegar, and 1 garlic clove in small bowl for marinade. Using spoon, scrape out gills from mushrooms and place mushrooms on rimmed baking sheet. Brush marinade over both sides of mushrooms, arrange hollow side up, and let stand at room temperature 30 minutes.
- Prepare barbecue (medium heat). Mix panko, next 5 ingredients, and remaining 2 garlic cloves in medium bowl. Drizzle butter and remaining teaspoon vinegar over panko mixture and toss. Divide panko mixture among mushrooms, leaving 1/2-inch border around edges and packing down slightly. Place mushrooms on grill, stuffing side up; cover grill and cook until cheese melts and juices bubble at edges of mushrooms, rearranging mushrooms occasionally for even cooking (do not turn over), about 6 minutes.
- *Panko can be used in any recipe calling for dry (not fresh) breadcrumbs - such as eggplant parmigiana, chicken tenders, or meatloaf. It is available in the Asian foods section of some supermarkets and at Asian markets.

Tasty and not too hard to make. If you prefer, use 8 small tomatoes, bake in muffin cups and reduce baking time to 15 minutes.

- Preheat oven to 400 degrees F (200 degrees C).
- In a small saucepan over high heat, bring water to a boil. Stir in rice; cover and remove from heat. Let stand covered 5 minutes or until water is absorbed. Fluff with fork.
- Slice off the top of each tomato and scoop out the pulp, leaving a 1/4 inch thick shell. Reserve 3 tablespoons of pulp, chopped. Invert the tomatoes to drain.
- In a medium bowl combine rice, tomato pulp, green pepper, onion, parsley, salt, garlic and olive oil; mix well. Spoon filling into tomato shells.
- Bake in preheated oven for 20 to 25 minutes.

- For vinaigrette:
- Blend all ingredients in blender until basil is very finely chopped and vinaigrette is thick; season to taste with salt and pepper. (Can be made 6 hours ahead. Cover and chill.)
- For salad:
- Cut small skin-deep X on end opposite stem of each tomato. Drop tomatoes into saucepan of boiling water; cook 30 seconds. Using slotted spoon, transfer tomatoes to plate. Starting at X, peel skin off tomatoes. Cut 1/3 to 1/2 inch off end opposite stem of each tomato. Using small spoon, scoop out insides of tomatoes, leaving shells intact. Mix cubed mozzarella cheese and chopped basil in medium bowl. Divide cheese mixture among tomato shells, packing gently. (Can be made 2 hours ahead. Cover tomatoes and chill. Bring to room temperature before continuing.)
- Invert 1 filled tomato on each plate. Pour vinaigrette into 6 shot glasses. Place 1 shot glass next to each tomato. Garnish each tomato with basil leaf.
