VEAL ROLLS STUFFED WITH SPINACH AND GRUYèRE

Veal Rolls Stuffed with Spinach and Gruyère image

Steps:

  • Mash anchovy paste into 4 tablespoons butter in a bowl until combined. Gently pound cutlets to slightly less than 1/8 inch thick between 2 sheets of plastic wrap with flat side of a meat pounder or with a rolling pin. Pat cutlets dry and season lightly with salt and pepper, then spread 1 1/2 teaspoons anchovy butter over top of each cutlet. (You will have a little butter left over.) Sprinkle 1/4 cup cheese over anchovy butter, leaving a 1/4-inch border, then arrange spinach leaves, overlapping in 1 layer, to cover cutlets. Working with 1 cutlet at a time, arrange with a short side nearest you and roll up tightly, then secure with a wooden pick.
  • Put oven rack in middle position and preheat oven to 425°F.
  • Pat rolls dry. Heat 2 tablespoons butter in a 12-inch ovenproof heavy skillet over moderately high heat until foam subsides, then sauté veal, turning occasionally, until golden on all sides, about 4 minutes total. Transfer skillet to oven and bake veal until just cooked through, about 5 minutes. Transfer veal with tongs to a platter (reserve skillet) and keep warm, covered.
  • Pour off all but 1 tablespoon fat from skillet, then add wine and deglaze skillet by boiling (on stovetop) over high heat, scraping up brown bits, until reduced by half, about 2 minutes. Remove from heat, then add any juices accumulated on platter and swirl in remaining 2 tablespoons butter (not remaining anchovy butter). Cook over low heat until incorporated. Stir in parsley and salt and pepper to taste.

6 veal cutlets (scallopini; preferably cut from round; no more than 1/4 inch thick; 1 1/2 pounds total)
3 ounces Gruyère, coarsely grated (1 1/2 cups)
2 ounces baby spinach leaves (1 1/4 cups)
1/3 cup dry white wine
3 tablespoons finely chopped fresh flat-leaf parsley

Steps:

  • Set oven @ 400* Wash eggplant and cut in 1/2" slices...lightly salt. Beat the 2 eggs in a shallow bowl, have the breadcrumb mixture next to it on a shallow plate and have the large baking sheet next to that. Dip the egplant slices in the egg, coating thoroughly! Dip each slice in the breadcrumbs, coating both sides well, then place on greased baking sheet. Repeat until done and then bake for 20 minutes or until till brown on one side, flip over and brown on other side. Meanwhile, coat bottom of the 8x8 dish with a little of the sauce. When eggplant is all browned, remove from oven, (turn oven down to 350*) and layer eggplant on bottom of the 8x8 dish, cover with a layer of spinach, cheese and sauce.Repeat with remaining slices, spinach, sauce and cheese. (I tried it layering it differently and it was still good) Bake till cheese is all nicely browned and gooey! Let sit 10 minutes before serving...This gives it a chance to set.

1 medium ripe eggplant
2 eggs
(1) jar spaghetti sauce (I prefer Aunt Millies Traditional)
(1) bag baby or curly spinach (washed and dried)
2 C bread crumbs (I used a combination of italian and garlic herb)-mix in a little parmeason cheese with the bread crumbs
(1) 8 oz bag Mozzarella cheese (not-no fat)
(1) large baking sheet with a generous greasing of crisco
(1) 8x8 baking dish

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Scoop out the flesh of the eggplant, chop, and reserve. Season shells with salt and pepper, and coat with some olive oil; set aside.
  • Heat 1/4 cup olive oil in a large, deep skillet over medium high heat. Saute sausage and garlic until sausage is evenly brown. Stir in the reserved chopped eggplant. Season with parsley, salt and pepper. Pour in wine, and cook 5 minutes. Mix in the bread crumbs and 1/4 cup Parmesan cheese. If mixture is dry, stir in more olive oil. Stuff mixture into eggplant shells, and sprinkle top with remaining Parmesan cheese.
  • Bake in preheated oven for 30 to 40 minutes, or until eggplant is tender.

Lidia's Veal and Eggplant Gratinate (for One) image

Steps:

  • Preheat oven to 400 degrees. If using eggplant, cut off ends and slice off two long strips of skin, one on each side. With 1 skin side up, so that each slice will have skin on both sides, slice eggplant lengthwise, 1/4inch thick. Sprinkle with salt and pepper, and dredge lightly in flour. If using zucchini, slice on diagonal, 1/4 inch thick.
  • In a 6- to 8-inch ovenproof skillet (see Note), heat 1 tablespoon oil. Brown vegetable slices lightly on both sides, working in batches if necessary to avoid crowding pan. Add more oil as needed to keep pan lightly oiled. Remove and drain on paper towels.
  • Sprinkle veal or chicken with salt and pepper, and dredge lightly in flour. Melt butter in same pan until it bubbles, then brown meat lightly on both sides. Remove and drain on paper towels. Add shallot to pan and cook, stirring, until slightly softened, about 2 minutes. Pour in wine and simmer until syrupy.
  • Turn off heat and place pieces of meat in skillet. Lay basil leaves or parsley over them, then arrange vegetable slices on top. Spoon tomato sauce over, sprinkle cheese on top, and pour about 2 tablespoons water (more or less, depending on thickness of tomato sauce) around edges of pan. Bake 8 to 10 minutes, until meat is cooked through and liquid in bottom of pan is thickened. Sprinkle with torn basil or chopped parsley; serve with crusty bread.
