STUFFED KIELBASA
Another comfort food recipe using three favorites, kielbasa, garlic mashed potatoes and sauerkraut. I used a 4 oz. pkg. of potatoes and it was plenty. I also think I would use cheddar next time as the mozzarella vanished. Found this on Allrecipes website.

- Preheat oven to 350°F (175 C) Bring a large pot of water to a boil and simmer kielbasa for@ 8 minute to reduce fat.
- Prepare mashed potatoes according to pkg.
- Cut kielbasa in 4 equal portions and split each lengthwise almost all the way through so they lie flat.
- Layer each kielbasa with sauerkraut, then potatoes, then cheese.
- Bake in preheated oven 10-12 minute until heated through and cheese is melted.

- Preheat an outdoor grill for medium heat and lightly oil the grate.
- Grill kielbasa ring on one side for 4 minutes. Transfer to a cutting board, grilled side up.
- Cut a slit down the length of the kielbasa, leaving an inch on both ends. Be careful not to cut all the way through as you are just making a pocket. Stuff sauerkraut into the pocket.
- Carefully place the kielbasa back on the grill, stuffed side up. Grill for 4 minutes more. Slice into serving portions and serve.

- In a large skillet, cook bacon until crisp; remove to paper towels. Reserve 2 tablespoons drippings. Saute onion in drippings until tender. Stir in the sauerkraut, sausage, brown sugar, garlic salt, caraway and pepper. Cook and stir for 5 minutes. Remove from the heat; add bacon. Set aside to cool. , In a large bowl, combine contents of the roll mix and its yeast packet. Stir in one egg, water and butter to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 5 minutes. Cover dough with a large bowl; let stand for 5 minutes. , Divide dough into 16 pieces. On a floured surface, roll out each piece into a 4-in. circle. Top each with 1/4 cup filling. Fold dough around filling, forming a ball; pinch edges to seal. Place seam side down on greased baking sheets. Cover loosely with plastic wrap that has been coated with cooking spray. - Preheat the oven to 400 degrees F. Pierce the potatoes all over with a fork; microwave, turning once, until tender, about 15 minutes.
- Melt 1 tablespoon butter in a large skillet over medium heat. Add the kielbasa and cook, turning, until lightly browned, 5 minutes. Transfer to a plate; cover to keep warm.
- Melt 3 tablespoons butter in the skillet. Add the leeks and cook, stirring occasionally, until softened, about 2 minutes. Add the cabbage, 2 tablespoons water, 1/2 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until the cabbage is tender, about 4 minutes.
- Split the potatoes and arrange on a baking sheet. Top each with 1/2 tablespoon butter and 2 tablespoons Gruyere; fluff the insides with a fork to combine. Season with salt and pepper. Divide the kielbasa among the potatoes and top with the cabbage mixture. Toss the remaining 1/2 cup Gruyere with the parsley and sprinkle on top of the potatoes. Bake until the cheese is melted, about 10 minutes. Serve with mustard for dipping.

Steps:
- Cook 1 cup raw rice in 2 cups water and Cajun spice for 20 minutes on stovetop.
- While rice is cooking, cut peppers in half lengthwise, remove seeds. Place in microwave safe dish with 1/2 cup water and steam 4-6 minutes.
- Heat oil on medium high heat in 12 inch skillet. Add onion and garlic. Cook 2-3 minutes. Add sausage, tomatoes and kidney beans. Reduce heat and simmer for 5 minutes.
- When rice is finished, add to skillet and combine.
- Remove peppers from microwave. Place on plate and fill with rice mixture. Spoon additional rice mixture around the peppers and serve.
