CHERRY PISTACHIO COOKIES

- In a large bowl, cream butter and confectioners' sugar until light and fluffy. Beat in egg and orange zest. In another bowl, whisk flour, baking soda and cream of tartar; gradually beat into creamed mixture. Stir in cherries and pistachios., Divide dough in half ; shape each into an 11-in.-long roll. Wrap in plastic; refrigerate at least 2 hours or until firm., Preheat oven to 375°. Unwrap and cut dough crosswise into 1/2-in. slices. Place 2 in. apart on ungreased baking sheets. Bake 8-10 minutes or until edges are light golden brown. Remove from pans to wire racks to cool completely. Frost cookies with melted white chocolate; let stand until set., To Make Ahead: Dough can be made 2 days in advance. Wrap in plastic and place in a resealable bag. Store in the refrigerator., Freeze option: Place wrapped rolls in a resealable plastic freezer bag and freeze. To use, unwrap frozen logs and cut into slices. If necessary, let dough stand 15 minutes at room temperature before cutting. Bake as directed, increasing time by 1-2 minutes. Decorate as directed.

Steps:
- 1. Grind the 1/4 cup flour with the 1/4 cup pistachios in a mini chopper or a clean coffee grinder until a coarse meal is achieved. Transfer to a large mixing bowl.
- 2. Chop the cherries and add to bowl. Mix and separate the cherry pieces. I do this with clean hands.
- 3. Add the sugar and zest. Rub into the mix with fingertips to infuse all the flavors.
- 4. Stir in the salt and soda with a fork.
- 5. Knead in, by hand, the flour, butter, egg, and remaining pistachios.
- 6. Form 1 1/2 inch balls of dough and place on an ungreased cookie sheet. Leave room for spreading out. Flatten each ball with the tines of a fork.
- 7. Bake in a 325 degree oven for 18 minutes or until slightly browned and set. Rest 2 minutes before transferring to a rack to cool completely. Store airtight. Makes 28 cookies.
SUGAR COOKIES WITH PISTACHIO AND DRIED CHERRIES
From Food Network's "All-Star Holiday Cookies" special (2007). These are from Robin Miller. I have to say, I goofed on my first batch. I didn't read the recipe all the way through and didn't melt the chocolate for dipping the cookies as instructed. I actually stirred the chips into the dough and they still tasted great...so do what you will. The dipping process would probably make them prettier. They must be kept air tight so they stay fresh. You may also substitute real sugar cookie dough. You may also use real cherries or candied cherries. I just used cherry-flavored Craisins. Enjoy!

- Preheat oven to 350.
- Open sugar cookie log and press into a rectangle on cutting board.
- Add pistachios and cherries.
- Press into dough and then re-shape into a log.
- Slice into 1/4 inch rounds.
- Transfer cookies to a baking sheet.
- Bake 7-11 minutes until golden around the edges.
- Transfer to wire racks to cool completely.
- While cookies are baking, melt white chocolate chips in a double boiler or a bowl over simmering water.
- When cookies are cool, dip bottom half of cookies into melted chocolate and place on waxed or parchment paper to cool.

CHEWY SUGAR COOKIES

- Preheat oven to 375 degrees F.
- In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
- In a large bowl, cream together butter and sugar until smooth. Beat in the egg and vanilla. Gradually blend in dry ingredients. Add enough of the buttermilk to moisten the dough and make it soft, not wet.
- Roll rounded teaspoons of dough into balls and place on a ungreased cookie sheet. With a brush or fingers, moisten the top of each cookie with the remaining buttermilk and slightly flatten the top of each cookie. Sprinkle with raw sugar or colored sprinkles.
- Bake for 8 to 10 minutes or until slightly golden. Let stand for 2 minutes before removing to cool on a rack.
SUGAR COOKIES WITH PISTACHIOS AND DRIED CHERRIES
I couldn't find this recipe last year, so I am happy to say I found it & plan to make it. I thought I would wait, until Christmas, but I don't think I want to wait that long. This recipe is by Robin Miller.

- In a bowl, combine flour, baking soda and salt. In a separate bowl, using an electric mixer, beat sugar, butter and oil until smooth. Add eggs and vanilla; beat until combined. Add flour mixture to egg mixture in 5 batches. Stir in cherries and chocolate. Divide dough in half; form into two logs, 2 inches by 8 inches; wrap in plastic wrap and freeze, 1 hour. Heat oven to 350°. Coat 2 baking sheets with cooking spray. Spread nuts on a cutting board; roll logs in nuts. Cut logs into 20 slices each and arrange on baking sheets. Press cookies lightly. Bake until golden, 8 to 9 minutes; transfer to wire rack.
CHEWY SUGAR COOKIES
I love sugar cookies that are crisp on the outside and very chewy on the inside. Do not try to roll these cookies out, they are meant to be shaped or dropped. This recipe can easily be made into snickerdoodle cookies by rolling the dough in cinnamon-sugar before baking.

- Preheat the oven to 350 degrees F (175 degrees C). In a medium bowl, stir together the flour, baking soda, and salt; set aside.
- In a large bowl, cream together the margarine and 2 cups sugar until light and fluffy. Beat in the eggs one at a time, then the vanilla. Gradually stir in the dry ingredients until just blended.
- Wrap dough with plastic wrap and chill for 30 minutes to 1 hour.
- Roll the dough into walnut-sized balls and roll the balls in remaining 1/4 cup of sugar. Place cookies 2 inches apart onto ungreased cookie sheets and flatten slightly.
- Bake for 8 to 10 minutes in the preheated oven, until lightly browned at the edges. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
