SUGARLESS BARS

A fruity and flavorful bar without the sugar.

Sugarless Bars image

Steps:

  • Cut dates and prunes into small pieces. Boil dates, prunes, raisins, and water for 5 minutes. Add margarine. Mix and set aside to cool.
  • Preheat oven to 350 degrees F (180 degrees C).
  • Mix the eggs, vanilla and nuts. Add to the fruit mixture. Sift the flour, baking soda and salt and add to the fruit mixture. (If you want a spicy bar add 1/2 tsp. Cinnamon and 1/4 tsp. Nutmeg to the flour.)
  • Spread in 7 x 11 inch pan and bake for 25-30 minutes.

Steps:

  • In a saucepan over medium heat, cook raisins, water, butter, cinnamon and nutmeg until butter is melted; continue cooking for 3 minutes. Add all remaining ingredients. , Spread into an 8-in. square baking dish that has been sprayed with cooking spray. Bake at 350° for 25-30 minutes or until lightly browned.

1 teaspoon ground cinnamon

1 cup all-purpose flour
1 egg, beaten
3/4 cup unsweetened applesauce
Sugar substitute equivalent to 1/2 cup sugar
1 teaspoon baking soda
1/4 teaspoon vanilla extract

This healthy snack is not just for diabetics. It's a nice light snack for everyone. I made them for my 4-H project that I took in today to the county fair. I received a Blue Ribbon on them. Make sure you use an artificial sweetener recommended for baking.

  • Cool.
  • Add all remaining ingredients and mix well.
  • Spread into an 8-inch square pan coated with nonstick cooking spray.
  • Bake at 350° for 20-25 minutes or until lightly browned.
