DELICIOUS SUN DRIED TOMATO ROLLS FOR BREAD MACHINE
I only use my bread machine for the dough cycle. This recipe was featured in a local paper and I really like it. Rolls have a beautiful color and the flavor is fantastic.

Steps:
- 1. Measure carefully, placing all ingredients in bread machine pan in the order recommended by the manufacturer. Select Dough/Manual cycle. Do not use Delay cycle. Process dough until cycle is complete and machine beeps. Remove dough from pan; place on lightly floured surface. Cover and let rest 10 minutes.
- 2. Lightly grease cookie sheet with shortening or spray with cooking spray. Gently push fist into dough to deflate. Divide dough into 12 equal pieces. Shape each piece into a ball. Place 2 inches apart on cookie sheet. Cover and let rise in warm place 30 to 45 minutes or until almost double. Heat oven to 350 degrees . Bake 12 to 16 minutes or until golden brown. Remove from cookie sheet to wire rack. Serve warm or cooled.
SUN-DRIED TOMATO & OLIVE LOAF

- In bread machine pan, place tomato juice, 1 tablespoon oil, salt, brown sugar, rosemary, flour and yeast in order suggested by manufacturer. Select dough setting. Check dough after 5 minutes of mixing; add 1-2 tablespoons water or flour if needed. Just before the final kneading (your machine may audibly signal this), add tomatoes and olives., When cycle is completed, turn dough onto a lightly floured surface. Roll into a 15x10-in. oval. Roll up jelly-roll style, starting with a long side; pinch seam to seal and tuck ends under. Place on a greased baking sheet, seam side down. Cover with a kitchen towel; let rise in a warm place until doubled, about 45 minutes. Preheat oven to 400°., Brush loaf with remaining oil. With a sharp knife, make 5 deep slashes across top of loaf. Bake 20-25 minutes or until golden brown. Remove from pan to a wire rack to cool.

SUN DRIED TOMATO RANCH ROLLS FOR BREAD MACHINE
These are great with taco soup or corn chowder. This recipe works with a smaller, 1 lb bread machine (like a Zoshi).

Steps:
- Put all ingredients in bread machine and set for dough setting.
- When dough is ready, cut dough into 12 equal pieces.
- Shape into balls and place in greased 9 x 13 pan.
- Let rise in warm area (you can turn oven on to warm, then turn off oven and put rolls in to rise) for 30 minutes or until rolls have nearly doubled in size.
- Bake at 350 degrees for 15-18 minutes until golden on top and slightly browned on bottom.
- Brush with melted butter and serve warm.

- Preheat oven to 200 degrees F (95 degrees C).
- Wash and halve tomatoes. Gently squeeze out the seeds. Place the tomatoes on a non-stick cookie sheet, and sprinkle with salt to taste.
- Bake until tomatoes take on a leathery texture. This could literally take all day; smaller pieces will require less oven time.

NO-KNEAD ROSEMARY PARMESAN SUN-DRIED TOMATO BREAD
This is an adaption of one of my Recipe #248237 to use Sullivan Street Bakery's no-knead method of making bread. It's amazingly easy and oh so tasty! The only special equipment needed is a 4 quart cast-iron or cast-aluminum dutch oven. See note at bottom before staring.

- In large bowl add flour.
- With hands stir in yeast,rosemary, tomatoes, cheese and salt.
- Add honey to water; stir into flour mixture and blend until dough is shaggy and sticky (to sticky to knead).
- Cover bowl with plastic wrap.
- Let dough rest at least 12 hours, preferably about 18, at warm room temperature, about 70 degrees. (I usually have to put in the refrigerator to keep it from rising to fast.).
- Dough is ready when its surface is dotted with bubbles.
- Lightly flour a work surface and place dough on it; sprinkle it with a little more flour and fold it over on itself once or twice. (See Note Line 17).
- Cover loosely with plastic wrap and let rest about 15 minutes.
- Using just enough flour to keep dough from sticking to work surface or to your fingers, gently and quickly shape dough into a ball. Generously coat a cotton towel (not terry cloth) with flour, wheat bran or cornmeal; put dough seam side down on towel and dust with more flour, bran or cornmeal, sprinkled with garlic granules or powder.
- Cover with another cotton towel and let rise for about 2 hours.
- When it is ready, dough will be more than double in size and will not readily spring back when poked with a finger.
- At least a half-hour before dough is ready to bake, heat oven to 450 degrees.
- Put a 3 to 4-quart heavy covered dutch oven (cast iron, cast aluminum) in oven to preheat.
- When dough is ready, carefully remove pot from oven.
- Slide your hand under towel and turn dough over into pot, seam side up; it may look like a mess, but that's O.K.
- Shake pan once or twice if dough is unevenly distributed; it will straighten out as it bakes.
- Cover with lid and bake 30 minutes, then remove lid and bake another 15 to 30 minutes, until loaf is golden brown. Cool on a rack.
- Note: Instead of removing the dough to a floured board (Step 7), I use the bowl; Sprinkle the top of the dough with flour and turn over, sprinkle more flour on top then fold the dough it over and on itself a couple times.

- Set to the basic white bread function. Select 1.5 lb loaf size and choose your crust color. Select start. When the mix-in sound beeps, add the tomatoes, basil, and parmesan.
