CHERRY TOMATO SALAD
This recipe evolved from a need to use the bumper crops of delicious cherry tomatoes we grow. It's one of my favorite cherry tomato recipes, especially at cookouts. -Sally Sibley, St. Augustine, Florida

- Place tomatoes in a shallow bowl. In a small bowl, whisk oil, vinegar, salt and sugar until blended; stir in herbs. Pour over tomatoes; gently toss to coat. Refrigerate, covered, overnight.

MARINATED CHERRY TOMATO SALAD
This is a very delicious way to use an overabundance of cherry tomatoes.

Steps:
- In a small bowl or cup measure, mix together oil, apple cider vinegar, herbs, salt, and sugar.
- Pour dressing over cherry tomatoes in a serving dish, and gently stir to coat. Chill for at least 2 hours. Gently stir from bottom to top, coating all tomatoes, before serving.

SUN-DRIED TOMATO AND PESTO NACHOS
This is a great way to use your first batch of basil! You will need to prepare your pesto before making this dish. These make a wonderful afternoon snack to sit around the patio table and munch on. I recommend using fontina instead of mozzarella because of its ability to stand up to the flavours of the other toppings.

Steps:
- Preheat oven to 400 degrees.
- Arrange chips on a baking sheet or in a deep dish pie plate.
- Top each chip with a little tomato and cheese.
- Bake in the oven for approximately 5 minutes.
- After you remove the chips from the oven, top each with a small amount of pesto.
- Do not put the pesto on the chips before you place them in the oven or you will have a tragic mess.
- Serve hot.
